It does taste 100x better if you cook the meat until brown with the onions then you strain the grease as well as possible, thennnn you add the seasonings and water (2/3 cup), bring that up almost to a boil then bring to a simmer for another 5 minutes or so until most of the water has evaporated out.

I think it's better if you brown the meat by itself first and drain the fat. Then brown the onion and add the meat back and blend it together. If drain it after you cook the onion and beef together...you are just wasting the onion flavor...like throwing out the baby with the bathwater.

I always 75% brown mine first and then drain the grease, at that point ad in the onions, peppers whatever. You get a small amount of grease that’s just right. I don’t ad this much water as I prefer a less runny taco meat. Overall this looks good and I’d give it a try.

Instead of putting the water in just leave it out so you have nothing to reduce. Water has no flavor so why reduce anything. If you feel like it will pick up the flavors and reduce down just put less water in

Use less water. Like probably 1/4 cup if Even. Just to get the flavors to distribute evenly. The little bit of water should reduce quickly. Personally, I would skip that step and instead knead the seasoning into the meat before cooking like you would with dough. Mix it by hand and really well. For Atleast 5 min. Then you can skip the water and just let it simmer a bit in its oils and juices. Let it cook in its own fat. Then If you want to be healthier, strain the beef fats and replace with just a dash of a healthy oil like olive.

WATER? Adding water or broth does two things ... First, it makes a Roux (Sauce) that will be cooked down... Second,...As the Roux cooks down it soaks flavor into the meat and also coats the meat. It does not need to be wet, but you don't want dry either.

    • @danielwellsfloyd

I would add some flour with the seasonings. Then you get a roux and the final product will be thicker, like Taco Bell beef.

That's not what a roux is...

Han Ooi yes it does, and it dilutes the flavor of the salt.
If you want to add water cover the pan for a few minutes and the condensation will drip into the meat. You want the meat to taste rich, not rubbery which is what the water will do. Meat is supposed to be fried, not boiled.

Oh. Well don't I feel dumb. Every time I made tacos, the meat was kind of dry and crunchy. Maybe it had something to do with how paranoid I am when I'm cooking meat, but... Wow.

Try experimenting with some freshly diced juicy tomatoes too... Gives it a tang, keeps it tender and tends to dry out the meat less than water.

    • @victormeldroo
      @victormeldroo 8 років тому

+CallMeFreakFujiko your doing just right meat should be dry, any other way is just crap.

if you want to be certain... grab the biggest chunk, and open it up, if its not pink, ur fine.
also, did you know that the majority of meat sold in the US is actually safe to consume at 125 degrees? cooking the outer parts of meat makes sense since that is where the bacteria would be, but on the inside, its typically safe which is why you can eat steak with a light seer and raw inside, Hell, most meat is safe to consume RAW.

Not simple, just the lazy way to make mediocre taco filler. You don.t need the oil for the onions. Mix them in with the ground beef.

You only need oil if you have lean beef. If you use a 70/30 mix, no oil required, but be aware that you'll end up with less meat after the fat cooks out. You also won't need any water since the natural fat keeps the meat moist while cooking. You want a next level tip I figured out for savory taco meat. Instead of a half teaspoon of cumin and paprika, add a teaspoon of powdered Au Jus mix, it would beefify (I just made that up) the flavor and make cheap ground beef takes like a Texas steak taco. The ladies can't get enough of my browned beef!

Some corn starch 1 tablespoon mixed well in a an 1/8 c of water until dissolved and then add stirring while thickening. Agree either cook longer or thicken sauce!

Definitely wouldn't add that much water if any at all. You're not so much adding moisture as you are just making it runny. The oil and fats are what give it moisture. This recipe looks amazing tho!
