    Rotisserie Chicken Salad
    1 ROTISSERIE CHICKEN
    1/2 MEDIUM ONION (MINCED)
    1/8 CUP CHOPPED CELERY
    1/2 TSP. DILL WEED (CHOPPED)
    1/4 TSP. PEPPER
    1/2 CUP MAYONNAISE
    Onion: Chop fine (mince) Use dehydrated or sautéd’
    onions for a milder flavor.
    Chicken: If refrigerated, take out and let sit at room
    temperature for 1 hour before mixing. Take off skin,
    bones, and cartilage. Chop chicken into 1/2 in size
    cubes.
    Celery: chop in small pieces.
    Combine above ingredients in large bowl and mix
    with a metal spoon so you can break up chicken
    chunks. (I prefer to hand mix…Tammy)
    Options: Omit Dill if preferred. Add additional
    ingredients like chopped pecans and grape halves for
    special occasions. Some like to warm and serve with
    toasted almond slices in salad.
    Appetizers: Bake small phyllo cups. 20 minutes
    before guests arrive put a dollop of chicken salad in
    each cup! People will love these!
    Sandwich: Best on sourdough (untoasted) with a
    thinly sliced cucumber and a little mayo. Yummy!
    Recipe servings vary with size of chicken.

      Yes, they sure are, so are a mix of red and, green grapes with a blend of mayonnaise and sour cream! I’d rather have my chicken more naturally sweet than, a overload of sugar, the way my mom and grandma made it like they have in the deli, it makes your chicken salad tend to taste mushy.

    When making my dressing for my chicken salad I use Dukes mayo (always), and a little ground dried mustard, honey, onion powder, garlic powder, pinch of basil, lemon juice, a little sour cream, and salt and pepper...if you like Panera's chicken salad...you'll love this.

    I add 3 finely chopped hard boiled eggs to the chicken mix. Also, prefer Hellman's mayo. Add about 1 tablespoon sweet pickle relish. My favorite sandwich!

    I am known for my chicken salad. About to share secret with the world....I simmer full fat chicken with onion, celery salt and pepper. SALAD: Shredded Chicken, celery chopped, boiled eggs, small amount finely chopped onion, Hellmans Mayo. SECRET INGREDIENT: The Homemade chicken stock . Enough to make creamy. This prevents using too much mayo and intensities the chicken flavor!

    I've been using Crasins since I was keeping them in the pantry for my grandkids. I pop a cup of water in the microwave, bring to a boil, then add the crasins to plump up while I get everything else ready. I add them last after draining. Reserve the liquid in case your finished product is too dry. I like the celery, onions and apple chopped ultra fine. I like to add a little celery salt even though I have celery. When I'm being fancy I add some poppyseed. If it's not sweet enough I add a few drops of liquid Stevia and refrigerate a few hours (if I get it made in advance).
    Sometimes I've added a dash or two of cayenne pepper, even cinnamon.
    I know your Chx Salad is top notch Tammy, just like everything you cook.
    Edit: Oh, I forgot the juice of one small lemon.

    Hi Tammy!! I am watching late and as always, am enjoying watching you make delicious looking food!! As many times as I have TRIED to Like Chicken Salad with fruit and onions in it…😟…I just don’t. I boil my chicken while making stock, then use the dark meat for another use, and use the stock to make soup. I shred the white meat, add a small amount of chopped celery, a little parsley, fresh ground pepper, 1/2 to 1 teaspoon of dill pickle juice, Kraft Mayonnaise (enough to bring it all together but not make it runny), then toss it with a sprinkle of slivered almonds. No fruit..no onions. I love this on croissants, spread with a little bit of mayonnaise and some leaf lettuce. Most of the time I use this chicken salad to make stuffed tomatoes. I serve the stuffed tomato (half of a tomato cut almost through, into 8 wedges, then add a scoop of the Chicken Salad on top), with a 1/2 cup scoop of cottage cheese next to it, plus a couple slices of fresh cantaloupe next to the cottage cheese, and then a 1/2 cup scoop of homemade potato salad with freshly ground pepper on top. Around the stuffed tomato, I surround it with 6 club crackers. It is a very pretty and delicious summer lunch plate. Sometimes I will make homemade Cream of Asparagus Soup , enough for everyone to have a one cup serving. About 32 years ago this luncheon plate and soup was served at a bridal shower that I attended. It was SO GOOD and VERY PRETTY! I have made this ever since that day! It all was served with watermelon punch that was to-die-for-good!! I call this my Tea Party Luncheon! 😚

      I don't put pickle juice in my chicken salad, but make my cole slaw now with just pickle juice, mayo, and pepper. I will also use dill relice and juice in tuna salad.

    I was raised on ranch farm cooking in Texas. Years ago I went to a deli that had the most delicious chicken salad I ever tasted. Along with the usual chicken salad ingredients, It had halved green grapes in it, and the real kicker-unsalted peanut halves. The top was sprinkled with paprika.

    When I peel a onion, I take off the first outer layer of the onion because it can be tougher. I do a keto friendly chicken salad by using dill relish instead of sweet relish and adding dill as well. You should try granulated garlic and onion as well instead of raw onions. I do not add anything that is sweet, it adds carbs back. I find Hellmans is the best out of others I tried. Your a great cook.

    I love putting grapes in my chicken salad - sliced in half. That and some squirts of lemon juice - ahhh!
    Other ingredients I use: boiled egg, diced celery, diced apple, sweet pickle relish, chopped pecans, diced onion, garlic powder, Helmann's mayonnaise, squirt of mustard, salt, pepper.

    I like grapes and pecans/walnuts best in my chicken salad served in warm croissants. I have tried it with apple and that’s really good too, but grapes are my favorite.

    My chicken salad I use canned chicken. I grate the onion, add sweet pickle relish, boiled (chopped) eggs and miracle whip. My husband likes it sweet, me, not so much so I add a few sprinkles of salt and pepper on mine portion. Delicious!

    We enjoy dried cranberries in our chicken salad. We've use a combination of different apples and sliced almonds as well. No secret ingredient per se, but there are never any leftovers! My crew will peel off a leaf of romaine lettuce and make a chicken salad wrap rather than using a tortilla athough soft tortillas work well, too, for a hungry crew! LOL

    I love chicken salad, and make it often at home. I aways add chopped onion and use real mayo but I don't care for chopped apples, grapes, or nuts in mine. My secret ingredient is so simple and one I always have in the fridge: several splashes of dill pickle juice from the jar. It is cheap and gives that pickle/relish flavor. Seasoned salt, garlic powder, salt and pepper.

    I never put dill weed or onions when I make chicken salad, but always put them into tuna salad.

    I add dried apricots and sweetened cranberries and almonds..of course what you did too..plus a dab of horseradish sauce in the mayo…only Dukes mayo! I have also used KFC chicken breasts.

    I like cranberries and chopped walnuts in my chicken salad. I also add 1/4 cup sour cream to the Mayonaise and mix them well then add 1/2 tablespoon of honey.

    I love chicken salad. The great thing about it is like you said, you can add anything you like. I make it different all the time, so we always have varieties of chicken salad. Sometimes we're in the mood for certain tastes than we are other times. That's the fun in cooking! The phyllo shells are a wonderful idea, and I am so excited to use them!

    Hi Tammy, I like to add Crasins and sliced almonds. It’s delicious. Or I add sliced seedless red grapes and almonds. I’ve never tried apples but that sounds good too. I always use miracle whip in all my salad’s. I’m a way north Illinois resident all my life and most people I know use miracle whip. I think it’s all in what you were raised with. 💕🙏🙏

    I have Always used grapes in mine!!! I watched someone else put apples in thiers so I tried it and it's Absolutely Delicious!!! God Bless Us All!!!

    Great. Thanks for sharing this with us! I like to add some crushed pineapple to my chicken salad . Ohh you just reminded me adding plumped up raisins is so much better than straight out of the box!

    If I was gonna cook your stuff, I would have to have exact utensils you use, not because you have recommended that, because you have not, but just because I rather do things exactly the way you do. I just like watching you cook, and I share your videos because I think you are an excellent cooking teacher with excellent recipes. I eat all low carb due to my diabetes diagnosis. It would be nice if you included more recipes especially for those of us who have to eat to keep our sugar count, A1-C down, but that is okay if you don't too. I still like watching you cook. I am amazed at it.

    My chicken salad uses a 1/2 cup Miracle Whip Light along with 1 cup regular mayo, and craisins instead of apples or grapes. YUMMMMM!🤤

    Good chicken salad "starter" recipe. I usually add lemon juice, sweet pickle relish, spicy mustard. Yum

    I'm known as the chicken salad queen amount my group and the ingredient that I add I got from a restaurant in Florida years ago was Mango Chutney ! It gives it an amazing flavor ! IMajor Grey's brand is what I use . About a third of a bottle per 3 or 4 breasts ., I also for something different craisins are really good in it . Depends on who I'm making it for a little curry powder is good in it . I don't put onions in mine but a lot of celery ! Hope you enjoy it !

      I forgot to add I do put a finely chopped apple and sometimes Grapes too cut in half so good and healthy for you !
