I'm quite fond of Belgian Endive. I successfully grew it for the first time this year. The size of the roots surprised me. I put them in the root cellar in moist sand, and got three harvests of the heads. I'll grow quite a bit more this season. I may take the spent roots and try roasting them to add to my coffee. Chicory is such a versatile plant, much like mustard in its variety of cultivars.
The endive bud has a pleasant bitter-sweet flavor. It's my favorite raw veggie, but is rarely found in our Arkansas USA supermarkets. Those "tubers" are actually the taproot of the chicory plant, and can be ground-up, roasted, and used as a nutritious and bitter-sweet coffee extender. Chicory coffee is most popular in the southern US. Wild chicory grows abundantly here in northwestern Arkansas USA, but the ONLY place I have ever seen them in the wild is along rural roadsides. The mature plant is about a meter tall and bears beautiful little sky-blue flowers much the same size and shape as flowers of Dandelion, which is in the same family of plants.
The aroma of chicory goes well with coffee. I have used it in a ratio of 1 chicory root/3 coffee. There is wild chicory growing in my yard, where it thrives and spreads by itself. (I live in Finland)

Martha Stewart has an endive and walnut salad in one of her books. Saute up some cut walnuts with walnut oil, and a dash of pepper and red wine vinegar and it is delicious. I like it with a pasta dish.
Also well-known in the Netherlands ('witlof') where I'm from. I've grown this myself (in Canada) - quite a bit of work but well worth the effort. Delicious as a cooked vegetable.

I constantly wonder why the birds don't eat half of the crop at planting time. After all, there isn't much food at this time. And the fact that they grow in the dark is not news half of the crop can be grown with artificial light or like mushrooms in the basement of your house

Chicory coffee was common in the civil war and the depression. When real coffee was scarce. So the old timers told me. I wasn’t there.

not true, not all cultures can grow in the dark, if you mean champignons, then these mushrooms can and hanging ones can too
They're probably eating the worms & bugs that are exposed with the machine
