So, when thinking about what makes a product sustainable, you have to think about the pros and cons to it. Kelp is very healthy, and grows relatively fast, but is high in sodium. It can be farmed, but is more difficult than traditional farming, meaning it requires more resources to cultivate and harvest and subsequently is less cost effective and will end up producing similar if not greater levels of carbon emissions to traditional farming. It does have the benefit of not needing to be fertilized, pollinated, or sprayed with pesticide, but like he said in the video, sea urchins eat them, meaning large commercial farms might turn to introducing predators or trapping sea urchins to prevent them from killing crops. While this might impact sea urchin populations, if done correctly, any repercussions could be mitigated, and sea urchins could even be lured and sold by such farms.

@@stradekun2554 The kelp numbers are just a common scare tactic, apparently one that works on the weak minded. Sea Urcnin numbers bloom every few years and they eat the kelp. Then the Urchins die off due to lack of food and the kelp comes back. Cycle repeats constantly. One thing that helped keep the cycle more steady were sea otters eating the urchins. Turns out, they are just part of the cycle too and return when urchin numbers are higher.
You can also deep fry the kelp leaves. When I was a young boy in Korea, my grandma used to cut the kelp leaves into square pieces and deep fry them and then season them with some sugar. What you end up with is salty & sweet kelp chips. They were pretty tasty.
I almost cried when he left that beautiful head of kelp-like greens behind. he had 5 lbs he could've taken and then dried. It is GREAT for your garden, too.
I used to do this back in the day with my grandma. She made some awesome Korean dishes with the seaweed. Seaweed/kelp is plentiful but not many people know about the benefits of it. Awesome video!
My Mom used to and still does incorporate seaweed with most meals, as does my family in Japan, well half there and half here in the States. Seaweed has been a staple in Japan, Korea, China, Vietnam and with so many other Asian countries for centuries so nutritious and tasty...........

My dad and I used to use bull kelp stems to steam fish fillets, just stuff them full of it, some water, maybe some seasonings, throw the whole thing in the fire then take it out and split it open. Dinner is served 👌

Stem can be cooked, but usually you are just after the heart of the plant. You can make an antiseptic/painkiller from a jelly/liquid that the cattail plant produces. It's really good for sunburns.

Thank you for sharing. Its looks like the bay behind you in Northern California. Blanching it also helps with some of the sea salt. You can try other recipes and different spices for pickling the bullwhip kelp. I'm from the Wisconsin. I've only seen Northern California except on TV. Or kelp that wild the bulb fills with air. That's so cool you can find blue craps and Bullwhip Kelp washed ashore.

Well not necessarily, having more alternative food sources decreases stress on existing food sources, making them more easily sustainable, also this kelp grow world wide and the ocean is huge with potentially massive potential for agriculture, plus it grows very fast and does not need sprays or insecticides so yes it's pretty sustainable but I understand what you are saying and it does have some merit

They're not necessarily. "Ocean taste" isn't always indicative of saltiness. Like, why aren't fish salty? All you'd need to do if they ARE too salty is just add more sugar to pickling mix. That's it. Then add things like mustard seed and dill and it'll cut the saltiness, but....pickling mixes usually always have salt.

Nice! on a mildly tangential note I have a huge batch of olives that are finally ready, tried a couple different curing methods, so far the just bog standard saltwater brine is my favorite, the dry salted ones are just super salty. My college campus has a ton of olive trees and they don't do anything with all the olives, they just end up littering the side walks, so I just went and harvested at least 15 lbs this past autumn.

I remember as a kid, there were always old ladies collecting seaweed off of the beach when I was a kid in Hawaii.
Used to have these in the early 70s when I was a kid in the northern Bay Area.

The liquid has to be of a certain salinity to kill harmful bacteria in pickles, I'd assume its the same here.

Watching/listening to you cut the kelp stalk was weirdly relaxing
adds brown sugar, which from my experience, turns black tea almost literally black, then wonders why the kelp turned brown XD

Just be aware of that kelp and seaweed contains a lot a iodides and if you get too much of those you can become very sick. :)

That is a truly INCREDIBLE plant. I mean, I just thought the rope and ball looking part were man made and that the kelp just grew at the end of it (like they put some kind of starter on it or something to attract the kelp and encourage it to grow)...

Thank you for sharing. Its looks like the bay behind you in Northern California. Blanching it also helps with some of the sea salt. You can try other recipes and different spices for pickling the bullwhip kelp. I'm from the Wisconsin. I've only seen Northern California except on TV. Or kelp that wild the bulb fills with air. That's so cool you can find blue craps and Bullwhip Kelp washed ashore.

Well not necessarily, having more alternative food sources decreases stress on existing food sources, making them more easily sustainable, also this kelp grow world wide and the ocean is huge with potentially massive potential for agriculture, plus it grows very fast and does not need sprays or insecticides so yes it's pretty sustainable but I understand what you are saying and it does have some merit
My hubby likes tuna salad sammies and I subbed Barnacle Foods kelp pickles in place of celery and his mind was blown. No doubt these are equally if not better than theirs. Great content as always!

I'll bet dollars to doughnuts there is absolutely no shortage of Kelp in California. If there is, its because of that other eco thing they tried to do of releasing fresh water into the bay or desalinating water and dumping that back in to areas making it too concentrated.

Wait why you add more salt when that kelp is already super salty
They're not necessarily. "Ocean taste" isn't always indicative of saltiness. Like, why aren't fish salty? All you'd need to do if they ARE too salty is just add more sugar to pickling mix. That's it. Then add things like mustard seed and dill and it'll cut the saltiness, but....pickling mixes usually always have salt.
Good question! It was salty but pickling mix need salt regardless. Although I did pull back the amount I put in. Worked out well!

Nice! on a mildly tangential note I have a huge batch of olives that are finally ready, tried a couple different curing methods, so far the just bog standard saltwater brine is my favorite, the dry salted ones are just super salty. My college campus has a ton of olive trees and they don't do anything with all the olives, they just end up littering the side walks, so I just went and harvested at least 15 lbs this past autumn.
