But how does Marcel escape?and how does Zeke transform since his body is regenerating?

How Marcel escapes will be revealed in part 3. Zeke manages to not get wounded by Levi because of Annie’s warning. Zeke and Pieck take her warnings more seriously than Reiner’s. This causes Zeke to notice a Levi a bit easier giving him some time to react and Pieck intervenes instead of watching Levi tear Zeke apart. These two things allow him to slip out with minimum injuries.
