Love your seafood menu. The name of the fish high water is kind of funny just like high wine. Guyana is so blessed with all those naturally grown foods and fishes, poulty , and other meats. My wife is pestketarian like you so she often enjoys your sea foods. We love lots for hot peppers like you but I find my stomach and intestine soothes well with gaviscon . It would be great to see you and your family enter into the indigenous communities and showcase some of their cooking and cuisines.
I do not know the universal name for the high water fish. The fishermen in Guyana give it that name simply because when the tides are high that’s when you catch them. We do have plans to showcase the indigenous people lifestyle but due to covid they closed their community to outsiders/ visitors.

Is it Wiri Wiri peppers or Scotch Bonnet peppers? Cause that pepper sauce is what really making me druel🥰. That's what I find completes a meal 🥰👍. Yes, I love to eat pepper in all my meals. You seem to have a lot of fish/seafood in your diet. I am a bit concerned with things like mercury and other metals in the oceans and how often they show up in the fish we consume even in the Atlantic. Did you ever take a blood test to for anything unusual?
You always cook all my favorite food, I don't get to do this often here in Canada. You have the abundance of fresh fish there , even though sometimes you have to pay a bit more.
I love how ur house always full of fresh food. This is the way to go. I never boil the high water. I fry it dry, mash it up with shelloth, onions, pepper and a little lime juice. U must try it that way. Its yummy. I will try it that way. Everytime u bite that fry fish, l am drooling. U too tantalizing.😂😂😂😂😂😂😭😭😭😭😭
