    Keep in mind, nutria is a lot like a mushroom. It absorbs what ever you cook with it. Nutria and steak is GREAT. AH see yall have some Billy's products from Opelousas, Scott, etc. AH have eaten nutria from different parts of Louisiana. MAH favorite is from the marsh. There is something about marsh nutria that tastes better than rice field nutria or beaver lake nutria. Nutria clean as easy as a rabbit and taste better than a rabbit, no matter where they come from. Nice to eat fish and fish rats together. Next time make courbouillon with nutria and fish. Man that's some good stuff.

    That looks delicious! No doubt it is, too. What did you boil the turkey necks in the pot with? Was it just water, chicken broth, or a combination of both?

    My dudes, it's damn hard to beat Savoie's jar roux. The heck with traditional method of making your own roux and risking it burning and having to throw it out. Pre-made roux is definitely the way to go these days since there are so many great variations out there.

      I like Savoies too but I much rather a fresh roux! But I do use it and I’ve made some videos with it too!!

    My grandpa couldn't eat the regular roux, cholesterol issues. Grandma started browning it out the oven.
    It worked. She would put it into a small bread pan. Flip it on low med heat until it browned.
    No grease.

      Browned it in the oven, flipping over and over until it was browned and as dark as a low heat on an old gas oven could go. Wish I knew the temp.
      It got dark, but not as dark as oil based roux. It worked, but it wasn't a full replacement on flavor.
      Edit: she might have had to add some kind of small amount of oil. But she could toss it over, so it wasn't that much.

      @@captaincobyscajuncooking6144 Can confirm. You spread it out on a cookie sheet or something and put it in the oven long enough to where it looks like dark cinnamon. I've even tried it on the smoker while I'm doing a chicken or something. Tastes good and does the trick. Maybe it's just me, because I'm new to trying it, but my gumbo doesn't quite get as dark as it would on the stove top. It's a good thing to make in advance and store up to use if you're in a hurry/lazy and want to thicken a stew or something.

      We used Bourgeois Sausage! It’s a meat market that makes their own sausage in Thibodeaux Louisiana! But I normally use Rabideauxs sausage gotta great smoked flavor and is seasoned just right! Hope that helps! Keep cooking and ill see you in the kitchen

    Naw. I'm not on the 🐁. That's worse than 🐢 gumbo. 🐿️ is ok. Smoked 🦃 Neck is the shi. Just add some sausage and it'll get eaten.

      That Nutria is really a clean meat! The animal is a vegetarian! I know it’s hard to overlook the tail and the name but if you didn’t know you might just like it!! lol thanks for watching
