From Cape Coast, Ghana, we drove inland to Kumasi, a major city in the central Ashanti Region of Ghana. I was excited to sample authentic Ashanti food, and to spend just a short time exploring Kumasi. The drive from Cape Coast took about 4 hours.
Fufu for Lunch - When we arrived, we were all quite hungry and so we stopped at a local chop bar (Ghanaian local food restaurant) for lunch. I’m not really sure of the name of this spot, or I don’t even think it really had a name written on it. But it was a popular neighborhood spot, especially known for their fufu - a West African staple food of pounded plantain and cassava. I had it along with a mix of palm nut soup and a variety of meats.

Ashanti Food Cooking in Kumasi, Ghana -
The main activity food activity of the day was meeting a host family and going to their home to cook and experience authentic Ashanti Ghanaian food. Before going home, we stopped at a local market in Kumasi to buy some vegetables, and some essentials for the cooking, especially taro leaves.
Kontomire stew - I didn’t really know what we’d be cooking, but learned it was a dish called kontomire stew, a stew made from fermented fish for flavor and mostly taro leaves (also called cocoyam in Ghana). The leaves were boiled and ground with garlic and spices, then doused in boiling palm nut oil to finish it. The dish was served with boiled green plantains and cocoyams that you could dip into the kontomire stew. It was also amazing to eat with avocado, and the highlight of my day was eating with the entire family.

I can see the similarity with African American food. The greens are very traditional to African American cooking. As a child my mother taught me to eat greens and cornbread with your hand, which obviously was handed down by ancestors who were enslaved in America. It's amazing to me how some of my ancestors traditions managed to continue even after being aducted to America. I love this! Thank you Mark!
We have something very similar in Fiji called “rourou vakalolo” with plantain, taro,cassava or breadfruit. Instead of the palm oil we cook the leaves in coconut milk. You can also make the a curry sauce with the coconut for the fish which is delicious. Thank you for this. Really enjoyed it. Love your hosts and we’re so blessed to have your cute family showing us what this beautiful world offers.

What i learned from this Ghana food series:
Hardworking but very friendly and happy people ... AND fufu.
Much of our Jamaican culture is f straight from out of Ghana, and these foods are all reminders that we did indeed bring much of our Ashanti culture to the Caribbean with us. Plaintain, avocado, susumba, dasheen and Coco, salted fish and salted meats, to name afew. I still remember my mother cooking dasheen leaves in soup.The same kind of meaty soups that are cooked in Ghana,
These videos of Ghana and it's friendly, happy people surely reminds me that we have not lost much of what we brought over with us, we have managed to retain much of our roots.
I sure hope that I get to visit Ghana some day soon.

my great grandmother is 107 and lives in kumasi ghana 💗💗💗 when i went to visit her last summer (she can’t speak english very well) i noticed that all she could say in english was “ITS FINE” and so i found 19:37 soo adorable!!

Mark, when you eat fufu in order to take enough soup make a hole with your thumb so that it is like a small cup. Then the soup stays inside and it is less stressful to eat.

I'm thinking about joining a "fufu pounding membership" for 3 months,I really need to work on my arms and shoulders.
Seeing this makes my eye water. I wish my fellow Ghanaians would have a little more pride and respect for their root. We can change the way we make the world see us. We need to rewrite the stories.
What don't we have? Even our food, the family bond, the sense of community etc.. is a beautiful art we can propagate. Ghana is a beautiful country, very peaceful and friendly people. I love being a Ghanaian and I couldn't be more proud. ✌🏼
