Homemade Kitchen Restock & Reset | Meals & Snacks From My Homestead Pantry

  • Join me for my weekly kitchen reset where I take stock of what we have on hand that needs used up, and plan for the coming week. We are loosely following the #threeriverschallenge #pantrychallenge and using this time to focus on utilizing all we grow, raise and put up here on our small homestead. This is what meal prep often looks like in my homestead kitchen.

    Fruit Juice Gummies:
    1 quart fruit juice
    5 tbsp grass-fed beef gelatin
    Pour juice into a medium sized pot. Sprinkle gelatin over top and allow to bloom for 5 minutes. Bring to a low boil, whisking until gelatin is fully dissolved. Pour into a glass dish or molds and allow to fully set in the fridge at least 6 hours.
    Apple Loaf:
    2 diced apples
    2 cups oat flour
    2 tsp baking powder
    1.2 tsp salt
    1/2 tsp baking soda
    1/2 tsp cinnamon
    2/3 cup cane sugar (panela is my preference)
    1/2 cup milk
    1/2 c apple sauce
    1/4 c melted butter
    1 egg
    1 tbsp vanilla extract
    Lentil Soup:

    *I loosely follow this recipe
    Mix together all ingredients and pour into a greased loaf pan. Bake at 350 for 50 mins.

    A easy and faster way to thaw meat or any other food is to unwrap it and place in a aluminum skillet without a lid, set on stove burner to permit air to circulat all around the skillet. I'v seen my grandmother do this hundreds of times and a plus with this method is that it preserves the flavor.

    The green pyrex mixing bowl you are using is a American kitchen must have, I had my grandmothers bowl exactly like yours then my cousin wanted something of my grandmothers so I a foolish move gave her the bowl, she never thanked me and I feel my grandmother was upset with my decision.

    I have just converted from making bone broth to bone bouillon - so I just reduce it down a whole lot more. I like the fact that it takes up way less room - and it's just pretty to look at.

      @@abbeyverigin I am a complete convert on this. So for example if I start with 1 carcass (with wings and other trimmings) I would add miripoix (celery, carrot, onion, bay leaf) as adding those in during the slow cooking stage adds so much more flavor than adding it in later on when you use the broth. So 1 carcass with trimmings, 1 carrot, onion, bay and celery. I cover it in water and slow cook on 200 in the oven for 12-24 hours (you can also do a second pressing using the same bones later). After it's slow cooked for a day - I strain it out and boil it down to about 1/2 cup (200 ml) or less if I can (the thicker the better - without scorching it - sorry this is long!

      usually just takes an hour or so to reduce. I leave the fat cap on and pressure can it. Or I can store in the fridge without pressure canning for quite a long time

    If you don’t have this homemade juice, what would you recommend for the gummies? Do you sweeten store bought juices or maybe just use a thawed frozen concentrate? I would LOVE to make this.

      I use store bought juice sometimes too. I always buy it without added sugar, I don't find it usually needs extra sweetener but once the gelatin is dissolved in the juice you can taste it to see if you need to add any additional sweetener.

      @@abbeyverigin Yes, i bought natural peach juice and learned that the hard way. 😂 But i threw those “beefy” gummies in my fruit smoothies where you won’t taste them. Next time i plan to try using thawed natural juice concentrate. Thank you!!!

    Where are the stainless pots and pans from? Do you have a list of your favorite cookware and/or kitchen favorites?

      The brand is salad master. They honestly aren’t my favorite because the handles remove, I’m sure some people love that about them. They work perfectly fine so I have no need to replace them. I link some of my favorites in the description box. My most used are my lodge cast iron pans!
