Like you listen to it a few times and then well you play it..er somehow. :D Because theres this song which doesnt have any sheets, the person who plays it only play it from hearing as well, and so could you write a sheet for it please? If that makes any sence :)
It totally depends. Solo covers take a lot less time than duet covers, but solo covers like this one probably take around an hour or two to arrange, a half hour to practice, and then an hour to video. Mashups take much more time, more on the scale of 8-10 hours to arrange, 2-3 hours to practice, and then 1-2 hours to video.

Yes, I play by ear. But it takes me a super long time to write out sheet music, which is why most of my covers don't have sheets.
