How to Freeze Dry Milk Duds!

  • This is my third attempt at freeze drying Milk Duds. Attempts number one and two ended with me having to scrub every square inch of my freeze dryer, as those little harmless looking candies exploded all over the place. This time I’m going to reduce the heat down a bit and also reduce the drying time. Let’s see what happens!
    I have the Harvest Right XL, so I can fit 10 rows of 4 on my trays. You’ll want to adjust yours to fit your tray size.

    Just an FYI: You could have left it at the 5 or 3 hours and checked it after 2. I always leave mine set for longer just in case I get busy and can't get there. You don't want them setting with it not running. They look great! I haven't tried them yet but they are on my to do list. Thank you for sharing your experience.

      Thank you! And good tip. It took me a while to get comfortable adding more time. I don't know what my hang up was unless it was a fear of "cooking" things too long. When I realized you couldn't over-dry food, it finally freed me. Such an interesting process, isn't it?

    I’m wondering if I got the right manual since it barely gives any information. My manual was just 30 pages it doesn’t cover things like system checks, extra drying, custom menu ( I only know about these things from UA-cam)etc. Did you get a different manual? Thanks

      I received three booklets: the owner's manual (29 pages), the guide to freeze drying (mostly recipes - 47 pages), and the XL vacuum pump owner's manual (8 pages). That last one actually has some really important information in the back that I did not see for quite a while. I had just figured I would look it over when we were ready to change the oil. Did you get all three of these? I'll admit that after reading the manual, I still went looking online and in Facebook groups to ask questions and get more detailed information. For me, the freeze-drying community has been pretty vital. Sounds like you've already figured that out. :-)

    We like our dried milk duds. I just ran some yesterday. I cut each dud in half so they're bite size. Glad you figured out the secret to success. I write my directions on my clipboard by the dryer as I figure out each items temps and times. It helped me when I want to run different candies I can do mixed batches that have.same time temp settings.

    I don’t have the commercial Harvest right but the new Large. I want to do these for my husband and son and never done candy. I hope your instructions work! Your temp was set at 135 and not any higher?

      Right! I tried it at 145 and at 150 and they exploded both times. But 135 was perfect. I've done them for 2 hours and for 3 and both are great. At 2, there's just the a tiniest bit of chew at the end of the bite, but I've had people tell me they like having both the fluff and the chew in one bite, so it's just a matter of personal texture preference.     I don't get the candy craze when there's so many possibilities for real food but agree it seems to be the first thing people ask me about.

      I know what you mean. Even today someone asked me how to do candy. I think it’s just the novelty of it. I have a few half-edited videos of some candy I did in December and will probably post those, but I don’t expect I’ll make more. My list of real food is too big! :)
