When playing TotK for the first time, I went in the order of Ultrahand - Ascend - Fuse.
Having been very familiar with Breath of the Wild the years prior, I knew that after the first shrine, the game felt more open in how to tackle it. I'd have to check the specific locations, but I felt/remember like the second and third shrines were in completely different locations across the map, so I just ended up making my way up the snowy and icy mountain to get Ascend. It was a fun and memorable experience.
Reflecting on it now 1 year later, I by now think that BotW has the better tutorial. As you point out, it's just better spaced and less a hindrance to travel through, which the Great Sky Island even to me as a veteran Zelda-player unfortunately was. I think I spent 8 hours in this place, definitively the longest I've ever spent in a tutorial in any game.
Though the atmosphere of the Great Sky Island was awesome, and I always enjoy returning to it.

An interesting video and comparison of the tutorial areas of both games.
In my playthrough, I did notice the linearity of TotK's sky islands. It felt more planned, but therefore a bit restricted.
Like you said, it seems to be necessary due to the complicated handling of Ultra Hand and Fuse. I certainly didn't use the Fuse-Ability as much as I should have on sky island and only really understood its purpose when I encountered stronger enemies in Hyrule.
But I also think the differences in tutorials has to do with the nature of both games.
BotW was a complete 180 from previous Zelda titles and the tutorial hammers this in perfectly. You come out of the Shrine of Life, you see the world and it is open to be explored. The only real first step is activating the Sheika tower.
BotW was supposed to make you feel free and it does so perfectly.
TotK on the other hand is essentially a second part, it builds on the ideas and takes them further with new abilities and new areas, but it is therefore a bit more overloaded and complicated. TotK needs you to understand the mechanics before it can set you free.
I didn't know that it is possible to do the shrines in a different order, and I might have to try out this route in my next playthrough.
That being said, I enjoy both tutorials and think they are beautifully designed and a testimonial to good level design for first-time players.

I spent a lot of time feeling like TOTK has been lacking something that I felt like BOTW really captured and I appreciate you covering it. Another thing that BOTW does is it teaches you that climbing and jumping can get you almost anywhere. They were a novelty back then.
Ultimately, I think that’s my problem. TOTK is a Zelda game like other Zelda games but BOTW refined the sandbox genre.

TOTK is probably a bit too open for its own good. For future Zeldas I hope Nintendo realizes "breaking the series's conventions" will have to include the conventions set by BOTW and TOTK.
A game with TOTK's mechanics but without paragliding or climbing would be very interesting.

@@Just_Jasen I don’t necessarily agree that it’s too open as I think it gives the player plenty of excuses to build vehicles.
Also you could always just play TOTK without climbing or the paraglider.

When I went through the Great Sky Island I went Ultrahand, Ascend, then Fuse. It didn’t feel out of the way for me and it surprised me when I saw videos of people doing challenge runs, thinking they wouldn’t be able to get to Ascend because they battery cell is only at Fuse, even though there’s a construct giving out a battery cell near Ascend as well

I'm gonna be real I was thinking about it again last night and I realized if you take the plane near the Ascend shrine, then getting Ultrahand second is really easy.
I still think it's the weirdest order but definitely not that out of the way
