    Flamingo cake next! This mermaid cake was beautiful, I'd love to see how you would decorate with a flamingo color palette. Ohhh, maybe with some of those big green palm leaves that are so trendy now. Pink and green, Miami-ish, flair. People would buy that right now

    It's so pretty! I gave a little squeal of delight at the cuteness of the dinky shells. They're so little! I love that this doesn't involve fancy techniques and equipment, just some clever and creative moulding and modelling of sugar paste!
    Did anyone else giggle at the words "meringue poops" or is that just my childish sense of humour?

      I don’t, we go through so much of it at the bakery it would take too long! Also, store bought sugarpaste is just better and more convenient 😅

      I did! But you can use regular buttercream if you don’t want it so rich. 😉

      I was told SMB wasn't as sweet as regular buttercream (icing sugar and butter) so I'm going to give it a try.

    From one cake lady to another....you can torch your buttercream to get a super smooth layer. And I mean torch your entire cake. Spin and torch. It changed my life!!

    This turned out so pretty . Did you use pearl sugar for bubbles? I was wondering if you used solid sugar to decorate around the mermaid tail. It is a beautiful cake and I love it. Thanks for sharing this wonderful cake.

    Do you put it in the fridge after putting on the fondant?

      No, I only refrigerate cakes during the crumb coat and before handling if I’m stacking them. Or if it’s a really hot day and I need to transport it. Sugarpaste/fondant goes sweaty when it comes out of the fridge sometimes so if you do refrigerate a cake with sugarpaste on it take it out a couple of hours before you need it so it has time to dry out

    I think children would want to eat the beautiful decorations. I know that fondant can be eaten but, if you’ve added cmc or gumpaste, are they no longer edible?

    Hey jemma love your videos! i was wondering can you use fondant with the molds too? i cant seem to get sugar paste here easily and can i use corn starch instead of corn flour? thank you :D

      Hey there, corn starch is the same as cornflour, just different names in the US compared to the UK. :) Fondant will work with the molds but just won't dry so hard and firm. So it would work better for the smaller items and things attached to the cake sides, but your mermaid's tail might not stand up so strong. You could use white chocolate instead maybe, for anything that needs to stand strong.
