  • Crunchy Asian Cabbage And Kale Salad Recipe - A Healthy Vegetarian And Vegan Recipe! This vegetarian salad will get you excited to eat your greens. An easy salad recipe for vegetarian and vegan meals and meal prep. This kale and cabbage recipe with asian-inspired easy salad dressing is one of the best salads I have ever made. Perfect healthy salad recipes for your busy week.

    ▶️ SALAD RECIPE INGREDIENTS:
    4 cups / 120g Kale - Thoroughly rinsed and pat dry with a clean kitchen towel / stems removed and finely chopped
    4 cups / 400g Green Cabbage - (1/4th of a medium cabbage) Thoroughly rinsed, core removed and finely chopped
    1/2 cup / 20g Cilantro - chopped
    1/2 to 3/4 cup / 30 to 45g Green Onion - chopped
    3/4 cup / 110g Roasted Peanuts - chopped
    SALAD DRESSING RECIPE INGREDIENTS:
    3+1/2 to 4 Tablespoons Olive Oil (I have added organic cold pressed olive oil)
    2+1/2 Tablespoon (or to taste) White vinegar or White wine vinegar
    2 Tablespoon Maple syrup (or to taste) - you can use sweetener of your choice just adjust the quantity to your liking
    1/2 Teaspoon Minced Garlic - 1 garlic clove
    Salt to taste (I have added 1/2 teaspoon of pink Himalayan salt)
    1/4 Teaspoon Ground Black Pepper
    1/4 Teaspoon Cayenne pepper (Optional)
    1/2 to 1 Tablespoon Toasted Sesame Oil (Adjust the quantity to your liking)
    ▶️ METHOD:
    Thoroughly rinsed the kale leaves, cabbage, cilantro and green onions and pat dry with a clean kitchen towel. Remove the stems of the kale and finely chopped it. Remove the core and finely chop the cabbage. Chop the cilantro and green onion as well. Transfer to a bowl and allow it to cill in the refrigerator until ready to use.
    To prepare the salad dressing add the olive oil, white vinegar, maple syrup, minced garlic, salt, ground black pepper, cayenne pepper to a small jar or a bowl and mix thoroughly. Also, chop the toasted peanuts and set aside.
    Now add the salad dressing to the chilled vegetables and mix well. 👉 MIX IN THE CHOPPED TOASTED PEANUTS INTO THE SALAD JUST BEFORE SERVING. Serve and enjoy!
    This salad is perfect for meal prep / meal planning and can be stored in the refrigerator in an air tight container for up to 2 days.

    Absolutely delicious salad that I will make often. The only additions I made were an extra garlic clove and 1 teaspoon Kikkoman soy sauce.

    Love you videos and have made a lot of your recipes.. I got ill 8 years ago and had to have a pacemaker put in and since then I really cannot stand the taste of smell of meat proteins so its all vegan around here.. I Love the idea of this salad but would spinach work in it??? Where I live the Kale all has an odd fishy taste that it. Thank you for your time and energy in creating these amazing recipes and videos..

      Spinach could work, but may be too soft. You could also do red cabbage with the green. The red has a bit more peppery taste so you will have to try it and see if it works for you.

      @jennidominguez5987 Spinach won’t work well for this salad. However, the salad dressing used in this recipe will mask the flavour of the kale very well so I don’t think it should be a problem.

    Looks fantastic! Was that baby kale you used? I hear it is easier to chew than mature kale? In the UK chewing on kale takes forever.😢

      I have used regular curly kale. Finely chopping it makes it much more pleasant and easy to eat but you could also use baby kale should you prefer.

      Yes you can. But mix the peanuts (well) in the salad just before serving this will prevent it from getting soggy.

    Looks amazing. I've always found kale to be hard to chew unless it's massaged first. Since you chopped it so finely does that help?

      Yes that’s correct by finely chopping the kale you don’t need to massage it. Makes it much more pleasant to eat :)
