In my food loving soul I knew that could not possibly make for a tender meat. I kept thinking "how can a chuck steak be cooked so quick but a chuck roast needs hours". I've made my own seasoning and am now anxiously waiting for the results. Thank you again!
I tried this and it was excellent. I added a few small potatoes towards the end. The only thing I did different was I did not pre season the steak. Placed it in the crockpot and added some seasoning salt, onion powder and a rub mixture. Thank you for this great idea!

This video was made 4 years ago but it sure is relevant for me on 1/15/24! I mistakenly bought 3 chuck steaks because I'm eating carnivore and the price was right for each. I invested in a Dreo Chefmaker for cooking all my meat perfectly but my first chuck, which I've never done before, was tough. So I hit UA-cam and found this video. I will be doing this for my 2nd chuck this week! Excited to see if mine comes out like yours. I mean, cutting it with a fork? I barely got my first one cut with a knife and it's chewy as heck!!! Had to spit out several bites I couldn't chew very long. Thanks for your video...really helpful!! UPDATE: Took my 2nd chuck out of the freezer just now. I'll salt it tonight before bed but doubt it will have begun to defrost. Will follow your instructions tomorrow!!! Will let you know how it goes!
My favorite new cook. Thanks, Tim. I burnt my first one, so the second time, I timed it by the hour using 2 different crockpots. My hamilton crockpot took 3 hours my West blend cooks mighty fast took an hour and 40 min.

We were going to do that one again as chuck steaks were on sale yesterday for $2.99 a pound(first cut with a small bone), but time got away from us. So we are trying the high method you describe here. I will post an update tonight after we eat it. Im sure it will be fabulous like all your other recipes we tried.
yep, fabulous, made wide egg noodles in a different pot, cooked the meat 4 hours on high, then on low for 2hrs, sit on warm for 1hr. I spooned the gravy over the noodles from the meat. meat weighed 2.4 pounds

Thinking of trying this with a chuck steak tonight in slow cooker. I'm going to put on the little raiser rack that came with slow cooker so it's not just sitting in the fat. Might also poke some holes in the top of meat with fork and pour a shot of Jack D over it to see if it adds any flavor or wasted a shot in attempt to add flavor!
Think it’s best to brown it on stove top before putting it in the crock pot. Did a steak for the first time in crock pot and was sitting in the juices.

I'm guessing now that this only works with chuck steaks? I tried this yesterday with a T-bone and a few sirloins. They were each fairly small steaks. On low between 5-6 hours and it didn't work all that well. The one that turned out the best was the T-bone, but even that wasn't that great. I will re-test with chuck steaks when I can.
I enjoy your videos but I do have one slightly negative comment, or at least a question. Why do you salt overnight? I was always taught to salt right before cooking due to the moisture issues with salting for longer periods. Also, have you really noticed a difference with overnight rub? Typically I would expect any kind of marinade to produce a deeper flavour profile with a longer marinading period, however, I am unsure when it comes to a dry rub with a long slow cook. Appreciate any feedback on this, thx.
I don't always salt overnight, but I do think the meat turn out juicier, especially when I cook it on the grill. I learned that from some of the BBQ guys. I always heard that salting too far ahead dries out the meat, but it seems to be the opposite, in my experience.
There’s no way that you cooked that in three hours in a slow cooker for it to look like that. What did you use a pressure cooker? That’s what it look like.

It works best with steaks that have quite a bit of fat like chuck steaks. The leaner ones get kind of dry and tough.
