A friend of mine cooked a big pot of Duck and smoked Deer Sausage Jamalaya and that was the most incredible jambalaya I ever tasted. If you ever have to cook with eggs, instead of chicken eggs substitute duck eggs instead. OMG it will be Quite the treat.
Wild duck is like premium beef steak from the sky.. it's tender, deep red color, and texture like beef.. .. if you weren't told, you'd think you're eating NY Strip..
I can’t say because I’ve never had duck in stew but I’ve had it baked to doneness like chicken then I’ve had the breast with skin seared like a steak and medium rare and the one that was medium rare was way better than the one cooked like a chicken, like I said that doesn’t mean that y’all’s stew isn’t great
