  • Ginger and scallion chicken, super easy to make and it is delicious 姜葱鸡
    Ingredients
    Marinate the chicken
    2 tbsp corn starch
    1/2 tsp salt
    Pinch black pepper or white pepper
    1 tbsp light soya sauce
    1 tbsp cooking wine
    3 tbsp cooking wine
    2 tbsp oyster sauce
    2 tbsp light soya sauce
    2 tbsp brown sugar
    2 tbsp dark soya sauce
    3 pound chicken thighs
    10-13 slices ginger
    Green onions
    vegetable oil
    1/4 cup of water
    Slurry
    1TBSP corn starch add 3-4 tbsp water mix
    Steps
    First, remove the fat part from the chicken, clean , dry them with paper towels then cut in pieces
    Use the marinating sauce marinate the chicken and set them aside for at least 30 minutes
    Cut about 13 slices ginger and chop some green onions, separating the white part and green part.
    Preheat the wok, put 2 tbsp vegetable oil into it, when the oil is hot put the chicken into the wok separating the chicken and put the skin side of the chicken facing the wok grill them until it is beautiful brown colour. Grill them on medium high heat for about 5-6 minutes, it might be slightly different depending on the size of the meat. Don’t flip them over to other side until it is nice brown colour. Once it turns to golden brown colour flip over to the other side and keep grilling. While frying the chicken, there is some grease came out , drain it out ( the chicken won’t be so greasy when eating it) when both side of the chicken is nice brown colour, put the ginger slices into the middle of the wok, sauté them for about half minutes and then mix with the chicken.
    Put the cooking wine into the chicken and mix it up then add the white part of green onions into it and mix well, add about 1/4 cup of water into the chicken, then add oyster sauce, light soya sauce, brown sugar into the chicken, mix them well and cover the lid cook on medium low heat for one and half minutes then open the lid and mix the chicken then cover the lid again and cook for another one and half minutes, add dark soya sauce into the chicken mix with the chicken then add the remaining green onions into the chicken, mix it well then slowly add slurry into the chicken to thicken the sauce. You don’t have to use up all the slurry you made, just check the consistency you prefer.
    Now the delicious ginger and scallion chicken is done.
