SCALLION OIL CHICKEN
4-5 Chicken Drumsticks - Rubbed with 1 tbsp Flour (or Baking Soda) and 1 tbsp Chinese Cooking Wine to remove fishy smell, rinsed with cold water, and then another round with warm water.
2" Ginger - Sliced
1 Green Onion - Sliced oblique
2 Star Anise
2 Cinnamon sticks
4-5 Bay Leaves
4-5 Dried Red Chillies
4 tsp Szechuan Peppercorns (he said a small handful)
1 tbsp Chinese Cooking Wine
4 cups Water (he said one large bowl)
Cover chicken with water, bring to boil and simmer on medium heat for 30 minutes. (he said boil on high heat but I think chicken will be overcooked if boil on high heat for half an hour)
Fragrant Onion Oil:
¼ or ½ cup Oil
½ Red Onion - Diced and separated
2" Ginger - Diced
3-4 Garlic Cloves - Diced
1 Green Onion - Sliced into half, then cut into 1" sections.
When Oil is hot, add Ginger and Garlic, then add Red Onion, then lower heat to fry till fragrant, and to extract flavour of Red Onion. Then add Green Onion and continue to fry on medium low heat till browned. When browned, drain oil to keep and discard ingredients.
Scallion Sauce:
2 tbsp Oyster Sauce
2 tbsp Soy Sauce
(he initially said 1 tbsp oyster sauce, then he said can add more and he added another tbsp before adding 2 tbsp soy sauce. He said as long as the ratio is 1:1)
2 tbsp Fragrant Onion Oil (he said 2 ladles but I guess 2 tbsp is good enough)
At this point, debone cooked chicken and place on to serving bowl.
To mix into Scallion Sauce when cooled:
3 Green Onions - Sliced into rings
3 Bird's Eye Chillies (Chilipadi) - Sliced into rings
Ladle Scallion Sauce Mixture over Chicken to serve with Rice.

After you've removed the chicken from the hot water, submerged it into cold (iced) water for 10min. Remove and rub salt into the chicken before you tear the meat apart.
It will make the meat and skin a lot more tender.
Also, add in shallot into the mix when you are frying the scent oil.
If u submerge the boiled chicken into cold water for too long, won’t it get rid off all the spice flavors we boiled the chicken with?
@@alexisle7053 I would assume submerging would different than washing , if we wash it off then yeah , but since submerging is like soaking guess we won’t lose much

鸡腿煮完了应该放冰水里急冷,这样鸡肉更有弹性,这种直接热锅出来的鸡肉吃着太散;蘸料油制作的时候应该是炸好的热葱油直接淋到备好的红辣椒和葱上,这样能最大限度激发出辣椒和葱的香味,你这么做直接一道热菜变冷菜了,而且辣椒和后切的葱味道融不进去料汁里。
