- Despite our brother's frequent mention of replanting new chilli plants in his chilli cultivation plot, he never sighted the bare plot until it was overgrown with grass. I went to see the plot one day out of curiosity and found only one bright red Scotch bonnet (nai miris) chilli plant standing in the middle of the ground. I was curious how the tree was saved from the birds with all of the red chillies on it. I came home with all of the scotch bonnets (nai miris). Some people call these "Kavum chillies,(Kavum miris) possibly because they are shaped like a kavum (Srilankan oil cake).
In addition to the picked chillies, there were some bird's eye chillies at home. I was just thinking about what I was going to do with so many chillies because they aren't like regular vegetables. These chillies are typically used in 2-3 pods per dish. I had the brilliant idea of storing half of the chillies in salted water mixed with vinegar. First, I boiled the chillies in boiling hot salted water with a cinnamon stick, a piece of the maze, and a few peppercorns, cloves and cardamom and vinegar before bottling them in the same water. When chillies are scarce, this is one of the traditional methods of preserving them.
Later, I decided to make a sauce with scotch bonnet chillis (nai miris). I also made a similar tomato sauce to use at home last week. I had the idea to make a chilli sauce that could be combined with my homemade tomato sauce to make a variety of dishes.
Since I made the tomato sauce, my brother has been trying every trick in the book to get me to make him some cutlets or rolls to go with the sauce. He must have realised that he wouldn't be able to get it done by me when I noticed him making the cutlets himself and eating them with a lot of sauce. I am confident that he will soon finish the sauce bottle. My brother always says that "The food is there to eat," so I didn't say anything, as in some ways, he is correct. He'd made the cutlets from minced chicken, sweet potatoes, capsicum, and cauliflower.
He had added a lot of salt pickled scotch bonnet chillies to the mixture because he was having this idea to eat the cutlets with tomato sauce. later by mistake, this silly boy put a lot of scotch bonnet sauce instead of tomato sauce, on the plate. I felt sorry for him because he had eaten the spicy hot fiery cutlets with the incredibly hot chilli sauce as well. He never goes easy on any sauce, but always eats a lot of it. Later He was like a fire engine the entire evening, eating hands full of sugar to dull the hot, burning taste in his mouth.

කඩාගෙන ආපු ඒවට අමතරේ තවත් ඉදුනු කොචිචි මිරිස් ගොඩක් ගෙදරත් තිබුනා. ඔච්චර කොච්චි ගොඩකින් මම මොනව කරන්නද කියලා කල්පනා කර කර හිටියේ. වෙන එළවළුවක් වගේ නෙමෙයිනෙ. එක සැරේකට පාවිච්චි වෙන්නේ උපරිම කරල් දෙක තුනයි. මම කෝකටත් කියලා මිරිස් ටික කල් තියාගන්න පුළුවන් වෙන්න කොටසක් ලුණු වතුරෙ දාන්න තීරණය කළා. කුරුඳු කෑල්ලක්, වසාවාසි කෑල්ලක්, ගම්මිරිස් ඇට ටිකක් එක්ක රත් කරගත්ත ලුණු මිශ්‍ර වතුරෙ තරමත් තම්බගත්ත ඉඳුණු නයි මිරිස් ටික ඒ ලුණු වතුරත් එක්කම බෝතලේකට දාගත්ත. එතකොට මිරිස් නැති දවසට පාවිච්චි කරන්න පුලුවන්.
ඉතිරි නයි මිරිස් වලින් මම සෝස් එකක් හදන්න හිතුවා. මේ විදිහටම මම ගිය සතියේ තක්කාලි වලින් සෝස් ටිකක් හදා ගත්තා. නයි මිරිස් සෝස් එකකුත් හදන්න හිතුවේ තක්කාලි සෝස් එක්ක එකතු කරලා තව තව කෑම ජාති හදන්න පුලුවන් නිසා.
තක්කාලි සෝස් එක හදපු දවසෙ ඉදලම මල්ලිගෙ ලෑස්තිය කොහොමහරි මම ලව්වම කට්ලට් හරි රෝල්ස් හරි හදවගෙන සෝස් එක්ක කන්න. මගේ අතින් ඒක වෙන්නෙ නෑ කියල හිතලමද මන්ද එයාම කට්ලට් වගයක් හදාගෙන ඇවිත් මහා සෝස් ගොඩකුත් එක්ක කන්න පටන් ගත්තෙ. එයා නම් ඔය සෝස් බෝතලේ දවසට දෙකට ඉවරකරනවා. මල්ලිගෙම බාසාවෙන් කියන විදියට ඉතින් කන්නනෙ හදන්නෙ, ඒ හින්ද මාත් මුකුත් කියන්නෑ. කුකුල්මස්, බතල, මාලුමිරිස්, මල්ගෝවා එකට එකතු කරගත්ත මිශ්‍රණයෙන් හදාපු කට්ලට් එක ගොඩක් රසට තිබුණා. තක්කාලි සෝස් එක්ක කන්න හිතාගෙන හදපු නිසා කට්ලට් මිශ්‍රණේට නැහැමින් ලුනු දාපු නයි මිරිසුති දාල තිබුනා. වැඩේ කියන්නෙ ඉතින් අපේ මල්ලි තක්කාලි සෝස් කියල දාගෙන ඇවිත් තියෙන්නෙත් නියි මිරිස් සෝස් එකමනෙ. සෝස් එකත් නයි මිරිස්, කට්ටලට් එකෙත් නයි මිරිස්, කන්න ගියාම කන්නෙත් සෝස් තලි තලිනෙ. ඔය හවස් වරුවම සැරයි කිය කිය සෑස් සූස් ගගා සීනි අහුරු අහුරු කකා හිටියෙ.
