They are very sensitive to the way you melt the sugar, the temp at which you remove them from the stove, and the amount of stirring you do once they are off the heat. If you get any of those wrong, you will end up with either a sticky mess of goo or a sheet of brown glass. I wish he would add this recipe to his website where he sells recipes.

He passed away and since no one in my family had made them but I order them from a lady in Louisiana($80 😭😑 but it’s so worth it to me I get several lbs). I don’t wanna pay that much anymore when I know I can make them for a fraction of the price but I just wanna get the right taste! Ima just give it a try for once.

Cajuns say peh kawn candy, but us Creoles say Praline candy. I'm from NewOrleans, but lived in Donaldsonville Louisiana, a Cajun town, and peh kawn candy (pecan candy)is what we eat and its delicious!!! It's basically the same thing, pecan candy is square and praline candy is round. Both are creamy and buttery, BUT........I think the Cajuns are NOT stingy with the pecans like us Creoles are. They put ALOT of pecans in theirs. LOL!!!!! YUMMY!!!!
Wrong! Praline candy or Pecan Pralines are the New Orleans way to say it. If you live in N.O and you say Pecan candy, then your people are from the Cajun areas like Monroe, Saint Rose, Baton Rouge, Destrahan, and those Cajun areas. But both way of saying it, we will know whatcha mean, lol.

You should post the recipe if you have it. I cook and bake all the time and just use my eye to measure and I’m sure you probably do the same 😂
