Ed was the kindest soul you'd ever want to meet, he moved to Oregon from Louisiana in the 1970's. I was raised with regular doses of Ed's Southern Red Hot Tamales and Frito Pies. Godspeed Ed, and thank you! I still dream of his food, once ED passed, I've not had another hot tamale. I need to get down south just for dinner! If it weren't for the regular 90 degree days with 90% Humidity in the South, I'd have moved to Alabama or Louisiana years ago just for the food. But alas, my Northwestern genetics mean I would die there. I haven't been down to Alabama or Louisiana since 2001. I require a steady stream of 55 degrees and rain, and when it's clear, below 30% humidity. I can deal with the "dry heat" it's that thick sticky stuff in the Midwest and South, I just can't deal.
