娘惹豆酱鸡 Pongteh Ayam
材料:
半隻 鸡(切块)
2~3粒 马铃薯(切块)
6-8香菇 (切半)
1大匙 葱末
1大匙 蒜末
少許 姜片
1大匙 豆瓣酱
调味料:
15克 椰糖
半湯匙 黑酱油
2湯匙 醬油
1杯 水
煮法:
1)锅里加入少许食油,将马铃薯煎一会捞起待用。
2)锅里加点食油,爆香葱,蒜末和姜片,加入豆瓣酱炒香。
3)加入鸡肉煸炒片刻,加入香菇和马铃薯
4)加入半湯匙 黑酱油克,1湯匙 醬油 翻炒出香味。
5)再加入1杯清水,15克 椰糖 以中火焖煮至马铃薯松软酱汁带点浓稠即可。
Ayam Pongteh / Nyonya Bean Paste Chicken
Ingredient:
Half chicken (cut into pieces)
2 to 3 potatoes (cut into cubes)
6-8 shiitake mushrooms (cut in half)
1 tablespoon minced onion
1 tablespoon minced garlic
A little ginger slices
1 tablespoon bean paste
seasoning:
15g Palm sugar
½ tablespoon dark soy sauce
1~2 tablespoons soy sauce (to taste)
1 cup water
Cooking method:
1) Add a little cooking oil to the pot, fry the potatoes for a while and set aside.
2) Add some cooking oil to the pot, sauté the onions, minced garlic and ginger slices, add the bean paste and stir-fry until fragrant.
3) Add chicken and stir-fry for a while, add mushrooms and potatoes
4) Add half a tablespoon of dark soy sauce, 1~2 tablespoon of soy sauce and stir-fry until fragrant.
5) Add 1 cup of water and 15 grams of Palm sugar and simmer over medium heat until the potatoes are soft and the sauce is slightly thick.
