    日本にはたくさんの種類のラーメンがあります。
    スープは「豚骨ベース」「鶏ガラベース」「魚介ベース」。そこに「味噌味」「醤油味」「塩味」などを加えてオリジナルのスープを完成させます。
    「低加水麺」の麺は水分が少ない分、よくスープを吸い歯切れのいい食感です。伸びやすいので注意。九州ラーメンの細麺には低加水麺が使われています。「多加水麺」はもちもち食感で伸びにくい。つけ麺などに使われています。
    例えば「豚骨ベース」でかえしは「醤油味」、麺は「多加水麺」で太めの縮れ麺。トッピングに背脂ともやしとネギとチャーシューというと「ホープ軒」や「naritake」などのラーメンになります。
    東京で昔から食べられているラーメンは「鶏ガラベース」「醤油味」「多加水麺」で細めの縮れ麺。トッピングにほうれん草、ネギ、ナルト、のり。です。
    日本各地でさまざまな組み合わせで親しまれているラーメンがたくさん存在します。

    The way he did the ramen with the egg yolk spilled out actually does make the yolk delicious to slurp together with the soup.. Good job :-)

    A bit odd for a video called "Ramen 101" to not explain what ramen is for those who are unfamiliar with it.

      But the video did nothing to even describe what makes up a "standard" bowl of ramen: The base seasoning (miso vs. soy sauce vs. salt, etc.), the base broth (chicken, pork, etc.) the noodles, and some standard possible toppings (hard/soft-boiled egg, nori, bean sprouts, chashu [pork slices], fish cake), just to name a few. This explanation should most certainly have been in a video alluding to be an introduction to Japanese ramen.

      @1337squirrel the reason why nothing was explained as far as the actual ramen bases and toppings and stuff like that itself is because of you read the video description underneath the title of the video youll see its about the RAMEN CULTURE OF TOKYO and not a guide TO tokyo ramen lol i hope it clears that up for you guys and helps out dudes

    even i gotta say that pork ramen looks delicious...and im a pretty picky eater...nothing fancy, just a real good broth, noodles, maybe some meat...gotta try it...

    I AM CHINESE. The instant ramen and realy ramen is different thing. ramen is from china to spread ,chinese called lamian and because the japanese high gdp so make it very expansive ,but chinese lanzhou lamian is famous and delicious

    ca donne faim. il y en a sans porc?? Does it exist ramen without porc?? I tried a ramen restaurant in Paris next to Opera Garnier but none of them was without porc. Finally I ate something else which was delicious but not ramen. Snif snif!

    I can agree ramen isn't healthy in the sense that it could be consumed every day. But if the ingredients that go in are made from the best ingredients and organic, daily consumption of the stuff wouldn't be nearly as bad as say, daily consumption of McDonalds.

      Your opinion is right.
      However, Udon and Soba also choosable In Japan.
      Both wonderfully delicious traditional Japanese healthy noodle.
      Personally, I can eat Soba every day .

    When Europeans eat Japanese Ramen, they don't make slurp sound to eat. But then the ramen is getting cold or low temperature. Eating Ramen must be quick eating. Because high temperature and real nice taste can not separate each other. So the slurp eating is needed for
    high temperature ramen. If you are big gourmet, you should eat Ramen with slurp sound. But it is not easy task for Europeans. You should train to eat slurp eating. But don't make noise too much. Observe eating Ramen of Japanese.

      ivan orkin was a french chef. he's a well respected, successful ramen guy in japan. moved to nyc to open up a respected, successful ramen shop, for clueless people like you to eat and slurp.

    it's funny when people want to act like there so into a culture they go overboard with every aspect, like slurping in other countries slurping is just not something you do at dinner or lunch we are taught from a young age it's not polite so yes if your in Japan then slurp away even though you still won't blend in but in England or America act normal unless you want everyone looking at you funny ,and yes in Japan it's a sign of good cooking to the chef but not here ... but dam I could go for a bowl of pork belly ramen with a soy egg

      i prefer slurping. i dont need scientific research, it just feels right. especially with the hot noodles.

      Because 5 years ago most of the English speaking UA-cam didn't know who else to talk to. If you watch Japanese TV shows and videos, obviously they showed other ramen-ya owners as well.
