Galaktoboureko rolls (Greek custard pie)

    Galaktoboureko is definitely one of the most classic and traditional Greek recipes.
    Made with layers of golden brown crispy phyllo, brushed with melted butter, filled with a creamy custard and bathed in syrup.
    Recipe:
    For the cream:
    4 cups milk
    1 vanilla
    4 eggs
    ½ cup of sugar
    ½ cup of fine semolina
    50 g butter
    For the syrup:
    1 ½ cups sugar
    1 cup of water
    1 tbsp lemon juice
    Lemon zest

    I eat this whenever I visit Tepekoy village, Gokceada (a popular island and holiday destination in Turkey). This dessert is the main reason why I make a very long trip from where I live to there. They used to prepare phyllo themselves here and it was way better than the one they make with ready made phyllo.

    what type of phyllo and thickness do you use? #7 or #10?

      This is the only thickness i ever find in stores so I'm not sure but i think is #5 because this one i also use for baklava. It is very thin.

    Can these rolls be assembled and frozen before baking?

      I have never tried freezing them but custard does not freeze well, it has a tendency to separate. So i think it won't have the same texture and taste. 🤗🤗

    How many ounces are 50 grams, please??? Thanks I used to make the "flogeres" a long time ago! I will try making them again!
