    My recent dietary changes have caused my to go Dairy free, but not totally Vegan, (I love my steak, hamburgers, and meaty proteins) being said, its a struggle to find wholesome recipes that uniform that kind of style. So I greatly appreciate this video. Thank you. :)

    what is the size of the spring pan ? I noticed that at 3:05 there's quite a lot of that puree left in the blender after you filled the pan. Is the measurement of your recipe somewhat off then?

      Hi Natalia, I don't suggest skipping the lemon juice as the cheesecake itself is not **that** sour. The sugar + mango + coconut milk + cashews really balance the sourness. Also, skipping the lemon might make the cake bland. Thanks for watching! :)

      1. My cake pan is 20 cm. / 8 inch.
      2. The mango is naturally sweet so I didn't add extra sugar for the topping. If you like it more sweet, you can def add more.
      3. Yes, you can make your own mango puree using frozen mangoes.
      4. Yes, you can add maple syrup (1/4 cup to 1/2 cup), or dates (8-12 depending on the size) for the filling.

      Got this from the internet. Hope this clears up any misconceptions: "Agar and gelatin serve similar purposes as gelling agents and thickening agents in various recipes. While gelatin is made from animals, agar is made from red algae, which makes it a popular vegetarian substitute for gelatin."
