Ingredients:
4 Cups Rolled Oats
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
4 Cups Milk or Milk Substitute
1/4 Cup Honey or Maple Syrup
2 Teaspoons Vanilla
2 Eggs
4 Tablespoons Melted Butter
1/2 Cup Chopped Dried Fruit
1 Cup Mixed Berries
1/2 Cup Chopped Nuts or Seeds
Directions:
1. In a bowl, whisk together the oats, baking powder, salt, and cinnamon. Set aside. In another bowl, whisk together the milk, honey, vanilla, eggs, and melted butter. Pour the milk mixture into the oats and stir to combine. Brush and 8 by 8 inch baking dish with melted butter. Add the dried fruit it the bottom of the dish. Transfer the oats to the dish. Top with mixed berries. Bake in a preheated oven at 350F for 35 minutes or until set. Top with chopped nuts and drizzle with more honey. Serve warm.
