Smoked fish is so good! I've done white bass and salmon so far in my smoker. First time I tried it I did just fillets and it cooked way quicker than I anticipated, but still tasted good. Second time I did white bass whole and was way better! By the way, fresh ginger is excellent mixed in the brine!

After brining the fish did you put them in the fridge or dry with a fan to create a pelicle?
I have noticed that with the White Bass Steaks I haven't needed to do that? I have just been rinsing them good after brining and placing on the rack then seasoning them and going through the smoking process and they turn out amazing!
What kind of pellets did you use?
It was a competition blend pellet they are a mix of hardwoods
What is a smoke tube and where can I get one?

Shame ya ruined the smoked fish with all that seasoning ya used. All that is needed is the brine if'en ya have a good brine.
