This is an awesome video game mode/concept, I can only imagine an alternate timeline where the NES version was more faithful to the arcade version.

Thing is, the NES was never powerful enough to replicate a powerful arcade game like Punch Out
And even then, the game we got on the NES is fine as it is, Little Mac and Doc Louis really make the game shine and are now the faces of Punch-Out, so sometimes it's best to be happy with what you have
