  • Though this drink was originally created for Pehlwani wrestlers to get refreshed and energized before a fight - you don't have to get in to a ring to enjoy the intriguing taste of this drink. FULL RECIPE BELOW.

    Thadal Recipe
    For 2 Servings
    INGREDIENTS:
    -1 cup of whole almonds with skin on
    -1 Tbl Cantaloupe seed ( from ½ cantaloupe)
    -5 green cardamom pods
    -¼ tsp or 8 peppercorns
    -1 tsp poppy seeds
    -1 tsp dried roses
    -pinch of fennel seeds
    -3 ½ cup of whole milk
    -1 cup cold water + plus water for soaking
    -saffron and dried roses for garnish
    Tools
    -Blender - glass kitchen aid
    -chinois or cheesecloth TBD
    -measuring spoons and cups
    -glassware
    spatula
    glass bowls
    INSTRUCTIONS
    -Soak whole almonds in water for about 4 hours to loosen skin. Remove and discard skin
    -Soak cantaloupe seeds, cardamon, peppercorn, poppy seeds, dried roses, fennel in about ½ cup of milk. place in refrigerator for about 4 hours as well.
    -Remove and discard skin from almonds. Its easy just pinch them between your thumb and finger and they'll pop out.
    -In a blender add the skinned almonds, soaked milk and spices, and the remaining 3 cups of cold milk and 1 cup of cold water.
    -Liquify on high speed.
    -Pour Thadal mixture over a strainer lined with a cheesecloth, chinois, or a nut bag.
    -Press or squeeze out all the liquid.
    -Serve cold and garnish with a couple strands of saffron and a pinch of dried roses.

    As someone who was born in the Pakistani diaspora and lives very far away from Pakistan, this video made me very nostalgic! The song, the ingredients, the drink ... everything is so quintessentially Pakistani! Brought a tear to my eye. God bless Pakistan.

    I've had this growing up, and still do whenever I visit my house in summers. We call it Thandai and when I saw the thumbnail I read it as Thandai only. This is a cooling, refreshing drink and this video took me straight to my childhood when my grandfather used to make it for us, he did not use an electronic blender, he'd use a grinding stone to grind almonds and seeds.🤍

    its urdu, not arabic. Urdu uses a modified version of the arabic script to writes its language. the beh with 3 dots is peh, it represents the p sound. like rabia said it says Aap ki sehat main in urdu which in urdu means to your health.

    If you don't have time to let the almonds stay in the fridge for 2 hours you can also pour boiling water over and let it sit for 30 sec to 1 min, then drain and pour cold water over them till they are cold enough to handle. This will loosen the skin quickly. If some of them have stubborn skin just pour them another shot of boiling water.

    Thank you! I don't know why we tend to generally forget that Pakistan and India were once the same country with the same gorgeous and rich cultural influences. I will confess one of my greatest guilty pleasures is watching Bollywood movies on Netflix. All.Night.Long. I would love to visit one day but alas!for now I can only do so vicariously via Netflix and Hulu.*sigh*

    This is also called Thandai...you guys shd do variations of these coz there r so manyyyyy yummier versions of this and in the summer ohhh yeahhh!!! Try an ingredient called 'sabja' which goes into a dessert called 'Falooda' ...you guys shd do Falooda

    Rose water is much much stronger than the petals. The petals have a really subtle flavor.

    Obviously almonds are a big factor in this drink, you're making almond milk basically, but would it be any good without the almonds? I have a nut allergy so...yeah...would the spiced milk w/o the almonds still taste good?
