Made this for the first time the other day using regular garlic, and replaced the white wine with sweet Marsala, and also added 1 tsp of hot Hungarian paprika (per 1 lb mussels). Aside from that I followed the recipe to the letter, and served the mussels on top of linguine that I tossed in the broth. My girlfriend and I agree that this is probably the best dish I've made in all my years of being an 'at-home/amateur/wannabe' chef.
Chef John has been my #1 source for recipes for nearly a decade and he hasn't steered me wrong yet!

Hi Chef John, i have been dreaming of this recipe since I saw it a month ago, finally had the chance to make it today, and it was wonderful! I winged it on the quantities of ingredients, and even though I have NEVER cooked mussels before, it looked just like your dish in the video, and tasted great. Even my food picky husband enjoyed it and complimented me! Thanks for the recipe and inspiration!

Made this today and it came out delicious!! Additionally I sautéed some bacon then added onions and celery and then followed the rest of the recipe. Thank you so much for the steps, 1 minute stir, two minute the parsley and I just needed another minute and half after that. They were just perfectly plump and yummy.

Mussels are amazing. I use white wine. Christmas Eve dinner is my favorite. Now that Grandparents and Mom have passed away we just do Christmas as with my uncle and my cousins and their kids. Christmas Eve is just me, my pops, my brother, his wife, and my 3 dear nephews. I do all the cooking, no meat whatsoever, if you're an Italian you already knew that, I have never in my 42 years on this planet ate meat on Christmas Eve.I love these UA-cam cooking videos. Thanks to it I discovered how to cookeel. Adding that to the Christmas Eve menu this year, a little nervous, but excited to make it.Mussels are a must, I make them with wine, olive oil, and a lot of garlic, and also serve them over linguine with marina and linguine aglio olio...

    Really delicious both ways!

God I love mussels and the versatility they have using different methods. If you guys wanna try a Thai style that will blow your face off. Start with 1 1/2 tablespoons minced garlic 2 teaspoons finely chopped shallot, use a tiny bit of butter and cook that in a large pot for about 30 seconds. Then add 13.5 ounces of unsweetened coconut milk, 1/3 cup dry white wine such as pinot grigio, 1/3 cup fresh lime juice, 1 table spoon fish sauce , 1 1/2 table spoon Thai RED curry paste, a tablespoon of white sugar. Bring that to a boil and let it cook for a minute or two to burn the alcohol out of the wine. Toss in the mussels stir it up until coated, cover until the mussels are opened, put in a bowl. Spoon the broth over and sprinkle with freshly chopped cilantro.

We kids didn't eat shellfish, but we loved to "hunt" clams and mussels. So while our parents chilled with adult beverage, we gathered buckets! The RI beach was rocky and the rocks were covered with mussels. Behind the beach was a salt pond teeming with clams and crabs. And it was all free!

"If you don't want to use alcohol that's okay you can use clam juice or some water. Is it just as good? Of course not. It's not even close!" Best quote ever

This is a classic dish. After watching this video, I cooked this twice, last Friday and tonight Monday. I bought 1kg of mussels and cooked 500g on Friday but only for me as my wife won't go anywhere near any seafood. Anyway 1st time (Friday) I added fresh cream and chilli flakes. The chilli was quite hot and it sort of overpowered the dish. Tonight I omitted the chilli and the quite delicate flavour of the mussels in the 'broth' shone though. Tonight I had a bit of a problem. On Friday I re-packed (with heat seal) the remaining 500g of mussels and put them in the fridge. When I opened them tonight I found that many were open. In this case what you do (according to advice on the net) is tap them and if they close they are alive and good. I they don't close they should be disgarded. Some of the open ones did not close so I ended up with ca. 300g which was good. So, the next time, I will cook the 500g on the day of purchase and the remaining 500g the next day.

I've lived in Santa Clara for the past 15 years, but grew up on PEI and still have a cottage there. We can see the mussel socks from the deck (and eat cheaply!). We don't always do them with wine, at the cottage it's just garlic, s/p and a bottle of beer. And nobody sits to eat, just put it on a platter and everyone helps themselves! but I don't recall anyone being topless! ;)
