I'll be honest... Scallops and mayo are one of those things that never really worked for me, but since it's Jacques I'll give it a go.

Scallops are best eaten raw-if you can find fresh ones.

He gets my feelings on jalapeños, hard to predict how hot they will be. That’s why Tabasco or stronger is better, it’s more consistent spice

Been watching you my whole life. Sorry for the loss of your wife. But ceviche does not have any sort of mayonnaise in it, ever!!! Maybe age but your giving people the worst case of bubble guts ever.

Ceviche without lime is like spaghetti without olive oil.
Well.... put oil in spaghetti and you'll be banned for life from Italy. Only the bad cooks add oil when cooking pasta.

Should be safe. Both tuna and salmon can safely be eaten raw, if they are fresh enough (as in, fresh not frozen).

So you don't cook your fish in lime or lemon juice first? What about the tiger's milk? I usually use bay scallops with shrimp. But I put them in a jar or bowl with fresh lime and lemon juice until they turn white on the surface which means the citrus has cooked them.
He is my go to chef on UA-cam, he is so real and relatable. On this point, I second you, maybe I am ignorant here, I thought lemon juice shall cook the seafoods first. I also find cutting the seafood and uncooked vege with the same knife and board a bit unsanitary. But I love this guy’s videos, so soothing, he is my ASMR as well.
@@mingzhou7201 No, both of you are correct in that seafood is "cooked" in the lemon juice for ceviche. But he likely felt that since the scallops are so fresh and of such good quality that it wasn't necessary.
As for him using the same cutting board for the scallops and the vegetables, both are going to be eaten raw so I personally don't see the problem. If he did chicken, pork, or shrimp, then you'd have a point.

I love me some scallops and I used to eat lots of raw sushi BUT. I don’t trust any raw seafood anymore. Parasite city. Just not worth the risk to me but too each his own
Imagine sitting down to a dinner of fresh lobster seviche, and being told by your chef friend how he prepared it. Live.
And you smile graciously for the dinner proudly prepared and presented, and afterwards feeling sick, not from the food, but from the cruelty.

Okinawans main source of protein is raw fish. Sushi. They're some of the longest lived people on the planet. Just go away now.
From what planet are you coming from? If what you say is right, then everybody eating sushi would have died a long time ago.
Ceviche is cooked with the acid in the lime, lemon in this case.
