One of the secrets of really good fried chicken is using lard, instead of vegetable shortening. There's a video on UA-cam about how to make your own homemade lard. It's actually not as bad for you, as most people think, and the increase in flavor is well worth it.
As with anything it’s the quantity that is bad for you. Lard is not bad for you in moderation.but if every meal you eat is full of lard. Yeah, your heart will explode…

I dip the chicken in milk, then flour, then eggs, and back into the flour for a wonderful crunch. Pepper and a little seasoning salt (I prefer Lawry's brand) is my family's choice of seasoning .
I can tell you that when my daughter, husband ,and myself tried to get Willie Mae's chicken when we were in New Orleans, there was a line that was 2 city blocks long. Needless to say, we never got to experience it. The line will start 2 hours before she opens up😅
This is just like trying to get some Franklin's BBQ in Austin, Texas. As a 4th generation native Texan (almost 73-year old grandmother) who grew up in Central Texas, I have my favorite BBQ places that aren't on the "tourist" map. BTW, there are 2 basic camps regarding cornbread: sweet or savory (not as sweet). Of course, there are many versions of cornbread with different ingredients added; such as jalapeños. So much of Southern cooking now has incorporated a lot of sugar, but I grew up with a more savory (less sweet) recipe, so that's what my family prefers. My cornbread is the less sweet version. I also hand-bread my chicken (and chicken-fried steak) with a flour and egg-milk, or egg-buttermilk batter. If I have the time, I will marinate my chicken overnight in the buttermilk. It tenderizes and makes the chicken more juicy. I don't go for a lot of spices in my batter; just salt, pepper, and maybe some garlic powder...just the old-fashioned basics.

I fried Catfish but had no breadcrumbs or corn meal guess what I used .....? JIFFY CORNBREAD MIX !! MARINATED the fish in cream egg and a bit of hot sauce . For about a 1/2 hour . Then add Garlic powder onion powder smoked paprika. Threw the fish in it and WOW !! it's my go to recipe for cat fish . I let the fish sit for 15 minutes before frying so the dry ingredients would set in and not fall off during frying
My mother made the best fried chicken, I'm not too bad myself. And you can do it too. Shake your chicken pieces in seasoned flour and gently fry on both sides in a good oil. Same thing with chicken tenderloins. I hope you give it a try soon, you can serve corn muffins with it. Lol.
I make fried chicken tenders by dipping in very seasoned flour and then into a batter made with just flour and milk that resembles pancake batter. Let it rest a while after you batter it and then fry in a skillet with about 2 in of oil. So crispy.

24 FEB24: To make chicken juicy soak overnight, minimum, in a salt water brine overnight in the fridge. For frying chicken, three things. for the flour mixture add in some cornstarch to raise the crispy level. On frying, get a dutch oven or a rondeau, what they call them in the restaurant trade. Oh yeah! and a fire extinguisher, just in case.
One of the best things I've experienced, making chicken at home, it sounds a little odd, but it isn't, get chicken and if you can get the ones that are already cut up and makes it easier, you take one of your stainless steel bowls, and you put your chicken you mix up a marinade, salt and Tabasco sauce and buttermilk! I know there's a lot of people who do not like buttermilk! I'm one of them as far as drinking it, but when you mix it with the hot sauce, and place your chicken in the marinade, cover it and let it sit overnight refrigerated, can you take your chicken after you marinate it and you flour it and pan fry it it's delicious.

The frying temperature is important. If not hot enough, the oil or lard will soak into the chicken, and it will turn out extremely greasy. If too hot, the moisture will boil out of the chicken, and it will be very dry. Ideally, you should have a vigorous sizzle, but not too wild. The moisture inside the chicken should only just come to boiling temperature, which pushes the grease out, and the grease should keep the moisture trapped inside the chicken so it can't boil out. You may have to expect to make a bad batch or two before you get a proper feel for it.
Other commenters are right, get a big iron skillet and heat up about 3/4 of an inch of lard in the bottom. I use sunflower oil these days but lard is best for flavor. Get it up to 365 degrees F before dropping in your chicken. It needs 20 minutes to make sure it is good and done. I grew up with chicken simply rolled in flour and fried. Don't be afraid of the bird! Go for it because food IS one of the best things in life,Carol!
Homemade fried chicken is awesome but I always let someone else make it! A deep cast iron pan or Dutch oven works best to maintain the temperature of the oil.
Recky and Carol, Idea for some decent fried chicken, get chicken pieces, marinate for three hours in buttermilk, combine roughly a cup of your Creole seasoning into three cups of all purpose flour. Pour some oil into a pot and heat to 350F, take the chicken out of the buttermilk and roll it in the seasoned flour, tap off the excess, let sit for five minutes so the flour gets soaked with the remaining buttermilk on the chicken. Deep fry for 11 minutes for breast and thigh, 7 minutes for legs and wings, or till golden brown., take out let drip dry, enjoy.

I cook my moms recipee which is buttermilk then dunk in flower which has salt pepper and papricka in it then into the oil

I just use a stainless steel saute pan with high sides to fry chicken. You dont need cast iron or a fryer.
If you want to make homemade fried chicken, I would suggest getting a pressure cooker. It cooks better and makes the meat juicy.
