Shark's Tooth - How to Make an Easy Tiki Classic (Don the Beachcomber 1937 Recipe)

  • Here’s how to make the Shark’s Tooth, a rare tiki cocktail that’s easy to make. It uses rum from Barbados and Jamaica, Lime Juice, Pineapple Juice, Simple Syrup and Maraschino Cherry Syrup. The drink was created by Don the Beachcomber and decoded by Beachbum Berry in his book, Beachbum Berry Remixed.
    The drink appeared on the Don the Beachcomber menu and in the newspaper at least as far back as 1937. It’s a pretty straightforward recipe for a Donn drink, both in terms of the accessibility of ingredients and simplicity of the measurements.
    The taste of this drink would be a little flat, especially for a tiki drink, if not for the maraschino cherry syrup. The syrup lends that much-needed third dimension to the drink. It also lends some much-needed mystery and exoticness to the drink. The cherry syrup changes the whole drink and gives it that flavor that's hard to pin-point or is slightly misleading, which of course, tiki drinks excel in.
    So, even though Beachbum Berry presents the maraschino cherry syrup as optional when he reprints the recipe, I'd highly recommend that you make it mandatory. Besides, it's an ingredient you're already going to have laying around for any number of drinks that call for maraschino cherries. Often times you'll run out of cherries long before you run out of syrup, so this is the perfect place to use it.
    If you want to make simple variations on this drink, you can do it easily by swapping out the cherry syrup for cherry liqueur, creme de cassis, creme de mûre, raspberry syrup, grenadine or something in that neighborhood. The fruit syrup does a lot of lifting for the exotic palate of this drink, so just making that minor change can give you some fun variations without having to retool or rebalance anything else in the drink.
    The rums are pretty straightforward. Barbados and Jamaica both produce really accessible rums. It's not like using rhum agricole or clarin or something that's not sold on every shelf. These rums should be pretty easy to track down.
    The mug used in the video comes from Trader Brandon and is a reference to cinema's most famous shark, Jaws. It's well suited for this drink, not only because it's shark-themed, but also because it's on the smaller side. It holds about 6 oz (180 ml). This drink is much smaller than most tiki drinks because the measurements are on the smaller end of the spectrum and it also doesn't call for the drinking vessel to be loaded with ice, so you can fit it into a smaller glass or mug.
    Donn recipes almost always call for a blender and I almost always ignore that and shake them because you can often achieve the right effect without a blender. And for making one or two drinks at home, making them in a shaker is fast and it's easy to control and to clean up. I blend this one in the video, but you could easily just shake it, if you'd like. The idea is that you want pretty much all of the ice to dissolve in the drink, and because there's so little of it, that won't be too hard to accomplish in a shaker. Either way, you'll be able to quickly and easily whip up an exciting tiki classic. Okole Maluna!

    Recipe:
    1 oz (30 ml) Barbadian Rum
    1 oz (30 ml) Jamaican Rum
    0.5 oz (15 ml) Lime Juice
    0.5 oz (15 ml) Pineapple Juice
    0.5 oz (15 ml) Simple Syrup
    1 tsp Maraschino Cherry Syrup
    3 oz (90 ml) Crushed Ice
    Garnish: Cherry & Pineapple Fronds
    Blend all on High for 5 seconds. Pour into mug or old fashioned glass. Add garnish.
    Original Don the Beachcomber Recipe:
    1 oz (30 ml) Barbadian Rum
    1 oz (30 ml) Jamaican Rum
    0.5 oz (15 ml) Lime Juice
    0.5 oz (15 ml) Pineapple Juice
    0.5 oz (15 ml) Simple Syrup
    1 tsp Maraschino Cherry Syrup
    3 oz (90 ml) Crushed Ice
    Garnish: Cherry & Pineapple Fronds
    Blend all-but Jamaican rum-on High for 5 seconds. Pour into mug or old fashioned glass. Serve with sidecar of Jamaican rum. Float the rum on top before drinking.

    Occasionally on Perry Mason you see Perry in what looks like tiki bars. They were very fashionable at the time.

      They totally were. As Beachbum Berry points out, there were even tiki bowling alleys. It was a hugely popular fad that also faded so quickly that it was hard to remember what it was all about.

      The 2nd edition Sippin' Safari doesn't really dive into this drink. It was covered in Berry's book, Grog Log. I just showed a shot of Berry's book to introduce him. Apologies if that was misleading.

    I bet a fair percentage of your subscribers experiment with their own original cocktail recipes. I know I do anyhow. So a question for you- what would you think about making videos for cocktail recipes submitted to you by your fans? Perhaps make it a patron-only perk or something? I'd become a patron if you'd do videos for a few of my originals... and of course I'd expect nothing less than brutal honesty in your critique. Just a thought... you might get more patrons with such a perk, and you'd probably have an endless supply of original material for video ideas.
    In any event, I love your video style. You aren't nearly as prolific as some of the other channels I subscribe to, but you're videos are easily my favorites. Looking forward to the next one!

    Glad to see you're using Combier. They do pretty good liqueurs. Have you tried " Pure Folie " spiced strawberries' one?

      Yeah, I fell in love with them after I tried Rouge (their cherry liqueur). They make some great stuff and are my first stop when looking for liqueurs. I have not tried the strawberry flavor yet. I recently had the grapefruit one and it's excellent. Cheers!

    Does anyone have opinions on whether this would be a good candidate for flash blending, rather than full blending? I’m a little unclear as to the drink texture we’re going for here. Is this like a pina colada or a Mai Tai or something else?

      Thanks. Glad you liked the video. In terms of the ice, the recipe calls for so little ice that I find that quickly blending it is enough to mostly liquify the ice. So, if the drink comes out like a frozen daiquiri, you've added too much ice. Cheers!

    I'm always wondering, when you say you bottle your juices, how long do they typically keep for? I'm a light drinker, it helps curb expensive tastes, but damn if I don't end up with citrus from twists that ends up drying out before I decide to go and use it for something else

      Yeah, citrus will last in the fridge for a couple weeks, but particularly with lime juice, it's not great after that long. It loses a lot of brightness. So, squeeze the citrus before you get started mixing drinks for the evening, but just do enough for the drink or two you're going to make. With citrus that's not too hard. Just squeeze a single orange or maybe 2 limes. But with something like a pineapple, you'll end up with a lot of juice. I usually end up cooking with it if I don't make enough drinks. Pineapple juice on homemade carnitas is amazing! Cheers!

    If you don't have access to the rums you use here, could it be made with Captain Morgan rum?

      If that's all you have, go for it. If you're thinking of buying Captain Morgan, I would opt for another rum. Captain is a spiced rum and you really want to control your flavors through the ingredients you add to it.
      If you're looking for brand recommendations, for the Jamaican, I prefer something with a giant, high-ester, tropical fruit-forward flavor like Hamilton Black (Blonde or Gold as well) or Dr. Bird works well in here too. Appleton or something along those lines will be fine, but it's just not as big a fruity as the Worthy Park rums (Hamilton and Dr. Bird). It's just a personal preference, but I like that added dimension to the cocktail.
      As for the Barbadian (or Bajan) rum, Doorly's 8-year, Plantation 5-year, Mount Gay, Foursquare and others will all work well as long as they are aged for 4-10 years. Plantation 5 is usually pretty easy to get your mitts on and both it and Doorly's are pretty inexpensive.
      If you can't find any of those, go for Havana Club Especial or 7-year (outside the US) or Don Q Añejo (inside the US). Goslings, Myers's, Brugal (Añejo), Real McCoy (aged), Matusalem, Bacardi 8-year will all work as well. You'll just want something aged if you can get it. Anyway, hope that helps. Cheers!

    Just a small correction. The Hamilton rum is not Jamaican. It's a Demerara rum. I have 2 bottles of Hamilton at home. It says it's Demerara right on the bottle. Not sure if anybody else caught that. Jamaican would be an Appleton Estate, or Wray and Nephew, e.t.c. I'm sure the drink is delicious though. Cheers !

      Hamilton has all kinds of rum from many different islands. The one in this video is a Jamaican rum. The one you have sounds like it’s a Demerara rum. But both are Hamilton. 👍
