There's only one way to make a proper Mai Tai:
      1oz lime juice
      .5oz Orange Curacao
      .5oz Orgeat
      .25oz Simple syrup
2oz of dark rum, either a blend of Jamaican & Martinique, or a variation.

I like this hotel version of the “ Mai Tai”. It’s definitely the most common. As pure, delicious and refreshing is the original version is, this is the one I’m used to. I’ll definitely be making this one. Another advantage of this version is you don’t have to use pricier, less common rums and ingredients. Although I might play with the recipe with some.

Dude a mai tai doesn't even have amaretto, light rum, triple sec, oj, grenadine and pineapple juice. It's supposed to be dark rum replacing the light rum, almond syrup instead of amaretto, and orange Curacao instead to triple sec. There's also supposed to be lime juice instead of the pineapple juice, oj, and grenadine.

    • @BigHenFor

The host said "there are many versions of this drink", as according to the history it's creation is claimed by two different bartenders who have recipes that vary from one another. What separates the men from the boys is... Taste. You have to taste the variations to choose which one works best. For instance, the humble Rusty Nail is basically a mix of scotch whiskey and Drambuie served in a iced rock glass, but the proportions of each affect the final product. The whiskey used makes a real difference too. My introduction to this drink was half and half Drambuie and Jonnie Walker Red over ice cubes. Not brilliant, because the JW Red was harsh and stiff, and only behaved as time passed due to the dilution from the ice melting. Substitute that for The Famous Grouse or, Glenfiddich (👍) for example. Then there's the ice shape - cubes or crushed? Then there's the level of dryness - more or less Drambuie? Do you rub the rim of the glass with lemon zest? Do you muddle a piece of lemon zest first to make the drink drier and the aromas less sweet? As mixologists, you have to be part artists and part chemists, because your techniques and knowledge of ingredients create the final product. So, I'm going to say that because of time and money, recipes can and should be adapted, where the original recipe cannot be recreated or nailed down, as your ultimate job is to make a good drink. So, yes where you can make authentic recipes but don't be a hostage to fortune. Train your palate, experiment, and learn. Be creative. Check out Bruce from BarTails&Cocktails entertaining video essay and demonstration on the Mai Tai: ua-cam.com/video/FPj3vEdz_XE/v-deo.html. If you don't want to hear the tale, skip forward to his demo. And watch this to consider why not all cocktail recipes are good ones: ua-cam.com/video/i_t3bB9diH8/v-deo.html.

      ¼ oz orgeat
½ oz Pierre Ferrand dry curaçao

This is NOT EVEN REMOTELY CLOSE to Vic Bergeron's original Trader Vic recipe(s) for the Mai Tai. This is a horrid recipe, in fact. Invoking Trader Vic's name, and then providing this recipe, borders on an outright falsehood.
A more authentic recipe would be 1.5 oz Jamaican gold rum, 0.5 oz dark rum, 1.0 oz fresh lime juice, 0.5 oz orange curacao (or Cointreau, in a pinch), and 0.5 oz of high-quality Orgeat syrup (e.g., Giffard). Shake, strain, serve with crushed ice in a large rocks glass, and garnish with a generous cluster of fresh mint and a spent lime shell. The crushed ice is key, together with the Orgeat flavoring and garnishes, to making an "authentic" flavored Mai Tai.
Any recipe that uses grenadine, Amaretto, or a fruit juice other than fresh lime juice, is a BAD RECIPE for this drink.
Trader Vic's original recipe used a 17-year-old Wray & Nephew aged Jamaican rum, which has not been available for more than 60 years. The combination of a modern Jamaican gold rum and a smaller amount of a dark rum is meant to mimic the original flavor profile.
Recipes you may find which include an added floater of high-proof rum are are NOT the "original" Trader Vic recipe. Trader Vic, however, would add this upon request for guests who wanted it, but even today, this is not the standard way of producing the drink at the few remaining Trader Vic's locations.

The original is more simplified, exceptional flavour, and all round enjoyable. And before I get hate, I know this video is out of date, but I still see this fake Mai Thai being made still.
