It's the "world famous" Duke's Mai Tai from Duke's locations across Hawaii and can be found at several restaurants in California. The main difference in this Hawaiian Mai Tai is the juice. Instead of lime or pineapple, we're using POG which is passion, orange, and guava. It's a sweet one that will need a little help from some lime juice. While not my favorite, as far as the heavy fruit juice Mai Tai's go it's not my least favorite and I'd happily order one at any Duke's location.

As someone that actually lived on the Oahu, the bars on Waikiki, including Dukes and Halekulani, were way out of our price range. Even the bars downtown like Skull and Crown are seriously expensive. That’s why I’m glad you’re showing us the drinks so we can test at home. Thank you for the Mai Tai series it’s a good idea to use for other cocktails too.

POGs?! Heck yes, childhood memories! Used to play "slam" pogs during our breaks in primary school. Don't get me started on the glitter pogs. Never knew the history of pogs. Thanks for that... I still do own my pogs, so cheers 🎉😂❤

We love visiting the Duke's locations, especially the one in Kauai where they have really cool stream running through the middle of the restaurant. Using the lime wedge is a great tip.

I really love that Mai Tai series
Fun, and validates my conclusions…Was at Dukes Waikiki in 2018 and again in 2019, and a pandemic project of mine was to reverse engineer their mai tai. Even found the glassware online, having decided it was better than the plastic one i got at the gift shop. I guess I enjoyed them so much precisely because the first thing I did after sampling a sip of the dark rum floater was squeeze and drop in the lime and stir it all up. My version increased the rum portions, and I replaced some ice cubes with frozen pineapple pieces. If I’m lazy and haven’t made orgeat, I just substitute Disaronno amaretto. The ordinary rums I’ve landed on are Havana Club 3 y.o., Bacardi amber spice, and The Kraken as floater. I also started adding a fresh mint sprig, since I have a healthy supply in the garden.
I miss my POGs. I used that acronym as a trivia question and don't believe anyone got it! Keep up the awesome work. Loving the channel!

Kudos on adding the lime! I was staring at that line while all that talk of lacking acid was going on andI was about to write a comment about it and then you squeezed it in and I was like "that's my man"!
Now I really wanna see the Hamilton 86 version to see if this template can be improved. I'm curious enough that I kind of want to try it, but I don't want to risk falling down the rabbit hole. I can't help but think to myself that if this was Greg from How to Drink, I KNOW he woulda pulled out that Hamilton 86 bottle and made a second one... and then he probably would have tried three or four others before starting to slur his speech 😂 But that sacrifice is for our sake so that we don't have to take the hit in the quest to know

Passion fruit juice will be way more acidic tasting than syrup. You might find passion fruit pulp by Goya in the freezer section. To make juice, thaw and blend with 2-3 parts water for one pulp, strain and optionally lightly sweeten if you want to drink the juice straight.
Depends on how you’re making syrup. I use a concentrate so that much more acidic than a juice and even when cutting it with sugar or a syrup it ends up sweeter than a juice oz for oz but more acidic.
It's been several years since I last enjoyed a Mai Tai on the front deck of Dukes Waikiki... That's it, I'm checking flights now!

Had one of these at Sunnyside and it was absolutely terrible!! Would be really interested to know how they make it there. Was a disappointment bc we love Sunnyside, it’s a cool stopover in west Lake Tahoe
I happen to have a bottle of POG juice since we saw it at Costco the other day, so I'll be making this tonight with the Hamilton 86 and acid adjusting. The POG juice is tasty, but it was too sweet for me, so using some up in this Duke's Mai Tai looks like the perfect use for it. Cheers on another great video!
Well acid adjusting definitely helped, but like Derek suspected, Hamilton 86 was not great as a floater on this one. It wasn't cohesive with the POG juice and a different dark rum would have been better. Maybe a Pot Still Black, Goslings, Coruba, Meyers would be better
I took another run at it and Plantation OFTD is a treat on this as the floater

Never had one at Duke's, but it sounds similar to the world famous Mai Tai's at Tahiti Nui (Kauai): juices - POG + pineapple.

Acid-adjusted POG juice for a POG Tai 👀
Not that it makes a huge difference sweetness-wise but the recipe I found (and made by a Duke's Bartender in the video) uses .4 ounces of Orgeat and uses PPOG juice, so pineapple, passion-fruit, orange, guava.

Dukes Mai Tai started me on my cocktail/tiki journey. It's not a great drink but still delicious and I have no shame drinking them to this day

I cast no shame on anyone who enjoys a Dukes Mai Tai or any of the Pineapple juice Mai Tais.

How would you acid adjust the POG juice?
I’d treat it like it’s 1% acid, if you’re using the acid adjuster I came up with i’d use 5 ml. If you’re acid adjusting a batch of juice you’d need to do some math because you use 3 oz of juice instead of 1 oz. I’m thinking that would be 16 ish grams of acid per 100 ml of juice.
Years ago my friend got mistaken for Tom Cruise by a table of Japanese tourists at Waikiki Dukes and he’s been riding that high ever since. He looks nothing like Tom Cruise.
Duke's Malibu and Duke's Waikiki will always be the two best of the chain. Also, the mai tai's I've had at Duke's Waikiki have tended to taste more boozy than this sounds.
