They don't need to show off their weapons at military parades like Russia and North Korea do... they always keep their projects secret. This is just some of the technology that has been seen by the public, and I'm sure within Area51 there must be lots of great planes and technology that they are working on.
Not really, the sound won't really matter if they can't find it's source, and you most likely won't hear it regardless. However the heat from engines do break the purpose of stealth as inferred sensor can detect stealth fighters, although not very many countries have inferred sensors.
