Depends on what you're into really. The A380 or B777 have arguably way more advanced technology than a Breitling L-39, and I think that's pretty cool ;)

Cathay normal hire only UK,AUS,NZ,CAN and few US Nationals as expats pilots.They are racists in general. That'S the normal procedure.Before Internet days in 91 ,I remember a letter received from a friend stating that at that moment in time they only hired nationals of that countries that I said above. But now they can't write that! It's a crime!

then why do I always get chinese pilots flying me in cathay? Tell me about 2 of my flight instructors who are hong kongers getting in successfully?
also tell me about the recently graduated CP59 and CP60 courses? Only one of them were foreign, all the others were local Hong Kongers!
