    Another great collaboration with Familia Kitchen! This time I got to try Gollita's Mexican Pork Chops with Tomatoes and Onions. I was amazed at how this combination of ingredients creates such a tasty and juicy pork chop. Now, I must say that when I saw the recipe, I wondered if I would like it because it is so different than what I am used to. I was so wrong because I ate 2 pieces and could have totally gone with a third!

    I thought I had an onion, and I didn't realize till too late. Added extra onion powder to the tomato sauce, and it was DELICIOUS! Thank you for sharing!!

    This is my 2nd time cooking this. 1st time was a hit! This go around will be in the oven @ 400* for about an hour. Added bay leaves also. Love cooking different foods. 2 of my children, their dad is from Colombia, 1 child, her father is from the Philippines. And I'm just a Southern mom. What a mix of foods! Even though they're all grown and gone, they still call and ask what I'm cooking. 😋 Sadly, none of them wanted to learn a vital area of life called cooking. But they love to come home to it.

      You sound like many of the parents I know! But I have seen where when they have kids, suddenly they start cooking. Not very good food, but eventually they are decent cooks! I hope that happens for you. My teen is not interested at all btw. So annoying... LOL

      Right! In this collaboration, I was learning to make this Mexican recipe. Never made it before and it was delicious!

    How long do you cook the pork chops after prepping? Do you let them simmer and if so for how long?

      Hi! After prepping, I let them simmer for a good 15 to 20 minutes. It also depends on how thick the pork chops are. I go for thinner or medium lately. I never made that recipe until that day because it was a collab with Familia Kitchen and now its a staple. My family loves it!
