So good and so easy to make. Thank you, John for another excellent recipe! I would also like to thank you for the excellent presentation of all your recipes, clear and concise. Seems I watch so many cooking videos where they are screaming in to the camera, disorganized, flailing their arms about, one antic after another, No thanks! I so enjoy your calm and peaceful demeanor, and soft spoken instruction.

      Very kind thank you.
Just a little extra information to help you along if you do try these baguettes.
Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ua-cam.com/video/HWpSbYV96_c/v-deo.html
I have recently uploaded a clearer and quicker version of my baguette recipe if you want to have a look, here's a link, ua-cam.com/video/f0RjnQGrwzw/v-deo.html

Made these today John. They came out great! I've been fooling around with some different baking ideas, so far I love your presentations the best. I'm a retired mechanic, not a cook, but thanks to your videos, I am learning. Best tip of the day was to heat the bowl!!! This dough rose better than any I have done thus far. Has to be warming the bowl. I appreciate the fact that you add all those little tips. For us beginners that information is invaluable! Thanks again. Sorry for the long post.

John I have tried this recipe and I don't know where it's gone wrong. I have never had a failed bread recipe before. They were fine until I proved the dough in the oven. When I took them out to stand on the bench for 10mins before cooking, they looked splendid. When I went to see to them after the standing time I was astonished. They had deflated and looked all wrinkled. I decided to try to cook them and they are like biscuits. They are in the bin.

    • @JohnKirkwoodProFoodHomemade
      @JohnKirkwoodProFoodHomemade  5 місяців тому

Over Proofing is the most common cause. If the dough is allowed to rise for too long before baking, it can overproof. This means the yeast has exhausted its food supply, and the dough has expanded as much as it can. When baked, the rolls may collapse because the gluten structure can't hold the gas bubbles.

@@JohnKirkwoodProFoodHomemade Hello again, John! I’m making these again for Thanksgiving. They were highly requested by the whole family! I’m making 60 this time because they were in such high demand!
I wanted to ask for next time - can I get them all ready the night before and then wait until the next morning to bake them, or do they need to be baked immediately after their proofing period?
I want to avoid fighting over who gets to use the oven, so unless I bake them the night before or have them ready for immediate baking first thing in the morning it can be tricky 😆

Hello John. First time I followed your recipe to a tee and made the most fluffy and delicious dinner rolls ever. Another time I thought of using less sugar and you guessed it - big mistake. I make them and freeze them and any time i fancy one it's ready after 30secs in the microwave. Thank you for the fan oven advice. I now know the recipe by hard but still listen to your soothing video. You are a Star Baker.

WOW Chef John all I can say is thankyou so very much, I have tried quite a few bread roll recipes by others and not successful, even though the stages were followed. I came across your dinner rolls by accident, made them and well the best rolls I have ever had. They came out exactly like yours and I put the butter on top and they were delicious, all gone, that's when I know they were good.

Done these today John. I used around 3/5 strong flour of a well-known brand, beginning with A and around 2/5 very strong flour of the same brand and with 14% protein as I’ve heard you get a better rise with more protein and also their Easy Bake yeast. They came out beautifully; so very well risen and worthy of of being sold at any bakery. It’s a thumbs up from me👍

Every one a winner John. What we love so much about your videos is not only the fact you go through all the preparation and cooking, but you take the time to list all the ingredients, as well as handing over little tips to help prepare and cook and more importantly you also give baking/cooking times and the temperatures - it's fail safe and faultless and makes it so much easier to replicate - trust me - there is nothing worse than finding a video of a recipe you really like, but can't do because they can't be bothered to put the weights and measures and cooking temperatures. Your videos are not only excellent, but faultless - thank you
