I've made this soup twice now. The 2nd time a double batch to enjoy leftovers for lunches all week! It's so delicious! Even my picky, won't eat veggies, 7 year old scarfs this down! Thank you!
As a student I always feel like I'm eating not too healthy. Gonna make this tonight! Don't have any veggies so I gotta go to the supermarkt and choose healthy veggies for the first time in weeks :D

JUNE 1, 2022...FREEZING COLD IN NON-SNOW (DRY) 1ST DAY OF WINTER 2022..EXCELLENT TIME FOR HEARTHY ROBUST HOT VEGETABLE SOUP..FROM MELBOURNE CITY, VICTORIA, AUSTRALIA😃❤☕
INGREDIENTS
1 tbsp oil
1 yellow onion, diced
2 celery ribs, sliced
2 carrots, peeled and sliced
1 red bell pepper, diced
2 garlic cloves, minced
1 tbsp Italian seasoning
1 19-oz can chickpeas, drained and rinsed
119-oz can fire-roasted tomatoes
4 cups chicken broth
1 Parmesan cheese rind
3 cups green kale, chopped
1 cup frozen green peas
1/4 cup freshly grated Parmesan cheese
Salt and pepper to taste
I've done this with the last portions of frozen veggies stuck in the back of the freezer too. frozen peas and carrots, frozen corn, or even a partial package of mixed vegetables.
Soup is definitely the best way to use up all of those veggies!

I made this soup the next day!! Oh so good!! I had gotten some baby potatoes in a food delivery and they were a perfect addition!! We will be making this again!!

For someone who’s cooking-challenged, I made this like a pro. I used fresh veggies and a bag of mixed ones I had in the freezer. I also used pinto beans instead. Next time, I’ll add the broccoli at the end so it doesn’t get soggy. I didn’t have cheese, but it was so good, my husband and kids wanted seconds. I felt so proud of myself! Thank you!

This was so good to eat!! I added corn instead of peas and popped a few potatoes in with everything else it was so delicious I couldn’t put down my spoon and I hated throwing away the vegetables that had gone bad just sitting in the fridge so it helped me put those veggies to use!!😋

I made this tonight and it was FANTASTIC!! I used spinach instead of kale, and mushrooms instead of peas. Added some potato. It was so delicious. I think the parmesan rind made all the difference!! (And fire roasted tomatoes!) thank you for this recipe!!! ❤️

Hi just to let you know have today made your soup. We have have cold months in the uk at the moment and it's what we needed. Omg everyone in my family all agreed it was the best soup I've made and have made a lot. By far the best . I have your recipe in my favourites so i know where to get to it.
