I am always amazed at how different note combinations will elicit a different response from deep in the mind. For example, an E flat by itself is just a note...with no feeling attached to it. BUT...place it between C and G, and you get that sad feeling of a minor chord. We are truly wonderfully made. This is terrific example of how combinations of notes can move that "emotion meter" back and forth.
Any tips or tricks for choosing non-diatonic notes to pepper in without them sounding too discordant? Like for instance, does it help to do an two octave voicing of the out-of-scale note, to reinforce it and not make it sound as out of place? And does it generally help to play them at least one full octave above or below the other notes so the incongruent intervals aren't as nasty? Are there certain degrees of a scale where a sharp or flat is typically more acceptable to our ears?

Not at all. you will never use the pitchbend if you are focused on playing and learning piano sounds. pitchbends will only be important if you want to do synthesizer sounds and solos (which are lots of fun)
any chord you want really! it is just about experimenting. You can always start with the root note and play around a scale relative to the chord you've chosen, but any note will have some relation to another.... good or not-so-good
