Double Smoked Ham | Camp Chef XXL Pro Pellet Smoker

  • I never liked ham… that is until I made a double smoked ham on a pellet grill! DANG are they good! So today I’ve got a spiral cut ham and I’m going to smoke it on my ALL NEW Camp Chef XXL Pro!

    The kit comes with everything you need: recipe cards, binder, ham seasoning, and ham glaze!
    I basically followed the recipe from the kit. Used the binder, seasoned, smoked at 225F in the Camp Chef XXL Pro smoker for 1.5 hours, wrapped the whole pan in foil and returned to the camp chef pellet smoker at 300F until it hit 140F internal temp. My 12lb spiral cut ham took 3 hours at 300F (4.5 hours total).

      Sort of. It was announced but it’s not available for purchase yet. In terms of creators, not many were sent out early.

    Hey Andy. Great info as usual. You were a large part of me buying my Masterbuilt 560 and I still love it and will try this recipe in it this Easter. One question, you didn't mention anything about a smokey flavor, maybe because it's already smoked and hard to permeate or it did have that smokey flavor. Thanks again, longtime fan.

      Glad to see you’re still coming to watch! It had a nice finish to it which also had a nice smokiness to it. I do find that smoke doesn’t penetrate super deep into ham though, so it’s probably not the best to judge on.

    Hey great videos. I’m curious what is the pellet burn rate for this smoker? Is it improved if burning charcoal or wood chunks?

      I haven't tested it specifically. I'm sure that there is a slower pellet burn when the smoke box is loaded up. I'll have to experiment.
