Alton Brown may have burnt the bread a little here, but at least he calls attention to how easy this is to accidentally burn with negligence. And at least his cheese is properly melted. Gordon both burned the bread in a very short amount of time, while simultaneously failing to melt the cheese, thus twice failing on how to apply heat.
As someone who has worked in a Pizzaria for over 2 years now, I can confirm that bubbling cheese will hypnotize the average joe and it is best not to stare directly at it!

2022 September- I’ve discovered our fingers suck at distributing crushed or small foodstuffs. For instance; loading my pipe i use my fingers but a lot falls on the tray. I observed my son use a scoop style motion with a matchbook cover, had my aha moment and now thanks be imma woman in knowledge of makeup-they make TINY LITTLE FUNNELS and SCOOPS for makeup and perfume that works very well in the kitchen with shredded cheese!!! Head to the girlfriend or wife and have them buy you some-or make a mess like the rest of us lmao 🤣🙏🏻❤️

Alton moved on to other shows. Food Network didn't do Good Eats any favors by only showing it in the middle of the day. GE had a significant following. If they had left it on prime time it would still be going strong today. I'm fatigued of glorified restaurant reviews and competitions. I want to see actual cooking again.

What do you mean, you don't enjoy the endless sea of shows where you see locals talking about a dish at a place, then roughly watch a vague dish prepped (just enough to make you think you're getting a recipe but not really) and then watch as the host shoves the food in their face whilst gushing empty platitudes to the chef?
Good Eats was more than a cooking show. It was comedy, drama, real food and tool education, science, amazing set pieces... so many things. I know a lot of us live with things we learned from AB still to this day and it's just a really feel good part of my life that I won't ever forget. Thank you AB.

There's an element of flavor that you can get on a charcoal grill you'll never find on a stovetop griddle. For example, I would throw some applewood chips on the charcoal and close the lid while the cheese is intially melting, and then again once the sandwiches are all bound up.
Regardless of the subject matter, this degree of passion and precision is inspiring. This method indicates a high level of understanding of what works and does not work, relative to its' subject, which can only come from long experimentation and experience.

to all those assuming the bread/cheese ratio is off - TRY it. makes a difference that you're grilling both sides of each piece, and then just letting it all chill out for 5min in the foil. perfect combo of crunch/gooey
This exact recipe is bonkers delicious and simple. Gourmet grilled cheeses often weird out the kiddos who are afraid to try them, but this one still functions very much like a classic grilled cheese and tastes amazing.
Weird out the kiddos? When I was a kid, I'd eat pretty much anything.
I mean seriously, I've been eating oysters and snails and all sorts of "weird" stuff since as far back as i can remember.
I have dealt with dozens and dozens of extremely picky kids over the years who won't try anything with cheese that isn't pizza or macaroni.

Not always by the book. Some episodes he mentions the traditional or popular ways of cooking something and points out flaws or what he disagree with and does it in a different way.
The whole point of "Cutthroat Kitchen" is to be dickish to the chefs (and it's not really my cup of tea for that reason). However, he's not a dick when he judges on "Iron Chef Gauntlet" (or when guest judging on other shows), just brutally honest.
