You can use cheese cloth instead of the coffee filter. Works better for me. Also, I if you can, try to make Crema di limoncello. Although a different drink, it's another level in my opinion.

And my simple syrup is 6 1/3 cups of water to 3 1/2 cups of sugar with the simple syrup added while warm. The Italian granny I got this recipe from told me adding the syrup warm gives a much better color in the end so that’s how I’ve always done it. I’d be very interested to hear your opinion on the finished result of this recipe compared to the vodka varient.
Yes pure alcohol and vodka are not interchangeable for this, and if you can ever single time you should use pure alcohol, as it extracts faster, better and it's taste is most neutral you can get. So you'll end up with better product for less money, quicker and much more of it! You just have to use more water to bring it down later... simple right? Typically with pure alcohol (95abv) you use 2 parts alcohol, 3 parts water and 1 part sugar (and about 10 lemons per liter of pure alcohol) You're getting double the output from the same amount of lemons. Infusion time is 1-3 weeks. About that interchangeability, they're fully interchangeable, but with a grim look at vodka which may bring it's own taste into the mix which will totally depend on the brand you use. If you have to be using vodka... use the one you'd drink neat.

@@SweetSpotKitchen extraction speed is very true though, 1 week and it's good, (scientifically it was proven 3 days was established as enough for full extraction with 95% alcohol). Some swear by longer times but that only leads to skins starting to dissolve into liquid on microscopic level.

Hey John - that’s a good question. The purpose for soaking the lemon peels with alcohol is the allow the alcohol to extract the lemon oils and flavors. I imagine the reason the simple syrup is added later is to allow the alcohol to do its work at “full strength” rather than have it diluted or have it chemically combined with sugar. My guess is that you’ll end up with weak lemon flavor. Normally the lemon peels lose most of their color. The success of that will be your indicator. I suppose you could let it soak even longer. Don’t despair. No matter what you’ve got a base for a cocktail or a nice lemony punch. Good luck! 🍋
I tried Vodka ONCE. The taste was "off." I couldn't get Everclear the day I went to the liquor store. Now, I call ahead two days before and they always have Everclear for me. Of course, if you're use to the Vodka taste, by all means, continue to use it.

I certainly can’t fit a whole batch in our freezer either. I’ve never had a problem but am not an expert in this area. There are plenty of sugary liqueurs with even less alcohol that are shelf stable. Hope you enjoy!
at 20 something abv, it will be shelf stable but it's a home made product you may introduce impurities. There's also effect of air and oxidization, typically fully topped bottles will sit on the shelf for like 1 year without change, but your millage may vary. Just use your taste, smell and common sense. Once you're introducing air it will be degrading faster and faster. On the other hand if you want really long term storage, you may just filter the extract well don't add any water or sugar, let it sit for couple days, filter again if you see any bits at the bottom, and then you have something that might sit for years. Bare in mind limoncello is based on extracting essential oils as opposed to fruit juices (with fruit infusions) so it's good to let it sit after being mixed up to fully blend it's best enjoyed as fresh as the scent will be very slowly evaporating into the bottle.
Very nice detailed video. I've seen orangecello and meloncello on the market. Would the steep or marriage time be the same for these other fruits? Also, what is the best way to remove wax from the lemons?
Thanks for your positive comments. I've made "raspberry-cello" with the same steep time, with pretty good results. So, yes, I'd say the same for others based on my limited experience. I've used a vegetable and fruit spray I picked up at the grocery store before. It was supposed to remove the wax, if I recall correctly. TLDR: The everclear was 95%, tastes great, very potent. Tastes similar to lemonhead candy with a slight alcohol burn in the chest, very mild, similar to high quality booze ironically. I had the idea to mix the simple syrup and tincture together while the syrup was still hot, about 15 minutes off the boil, in order to evaporate some extra ethanol. I had a theory that this may damage the oils of the lemon, however the taste is still plentiful. Taste test was 1 hour after being in the fridge. I’d like to believe that the liquor will become even more mild with time, as you’re supposed to let the final product sit for weeks anyway.
That's the way to go about it, just add more water, don't simmer evaporate the alcohol it's wasteful! (nobody does this so you don't have to either) Proportions for pure alcohol are 2 parts alcohol, 3 parts water and 1 part sugar (and about 10 lemons per liter of pure alcohol). This comes out to little above 30% abv which is traditional strength of the drink.
Joe and Brenda Ricci - the basic recipe uses equal parts of water and sugar to make the simple syrup: 2 cups of each. In the future you can adjust each batch by tweaking the sugar/water amounts. Let me know how it works out!

Yup, it's about 1/2 gallon. Most recipes call for zesting the lemons but I've found that peeling them (without getting the pith) seems to impart more of the lemon flavor. Feel free to add a few more lemons but with decent sized lemons, this works really well for me. Let me know what you end up doing and how it works for you.

Only Skip didn't count on there being a big heat wave that summer. You know what all those people were smelling on Elm, whew weeeee. Skip's family's bodies, decomposing in the summer heat. Apparently, one day Skip made Just one-too- many lemon phosphates. El snappo.
Always use pure grain alcohol such as Everclear and never ever use vodka. Vodka has flavors that come through in the final product.....also when using 190 proof pure grain alcohol you can adjust the alcohol content in the end. This recipe is basically lemon flavored vodka. It isn't actually Lemoncello.

Sweet Spot, visited a PA State store in Yardley this week. They had only 151 proof Everclear. After work I went to the Total Wine store in Claymont, Delaware. They had 195 proof Everclear. Use a Box grater. Faster and you get only the peel. Also, useful for making ginger beer.

I use 151 everclear (can't get the real stuff in the mitten state) and works really well.
Ends up being approx 60 proof (30%) when finished

Given the alcohol content, this should be safe to shelf-stable, right? As in it won't go bad on the shelf? I have a relatively small freezer.

Everclear 190 is what should be used! Not the same taste.
Always use pure grain alcohol such as Everclear and never ever use vodka. Vodka has flavors that come through in the final product.....also when using 190 proof pure grain alcohol you can adjust the alcohol content in the end. This recipe is basically lemon flavored vodka. It isn't actually Lemoncello.

I have a true appreciation for the time and application it takes to create a vlog! I didn't say 'terrible' now did I? Just the breaks in sequence and really, it's all down to personal taste. I am a devotee of Jamie Oliver, trouser dropping Paul Hollywood, and the foul-mouthed Gordon Ramsey, but admit to giving the latter a sabbatical for obvious reasons. I do love your beautiful kitchen! Not with Vodka? Why not? I'll admit I've never tried Everclear - not sure I can even get it in Pennsylvania.
Sweet Spot, visited a PA State store in Yardley this week. They had only 151 proof Everclear. After work I went to the Total Wine store in Claymont, Delaware. They had 195 proof Everclear.
Use a Box grater. Faster and you get only the peel. Also, useful for making ginger beer.
