I cannot convey how much I appreciate you sharing this with us! This was very special, not many people are willing to share their family recipes. There are people that may argue that some of the steps taken were unnecessary. But those steps are what made this recipe Artisanal.
I think the most important steps that people would tend to skip are the ultra pasteurization and the cold "cure" of the liqueur. When high proof alcohol is chilled in the freezer is mellows the "bite" and changes the mouth feel. That is why Russian Vodkas are normally served very, very cold.

I could watch this beautiful video 100 times. It gives me such joy, and inspiration. I made my first batch, really not knowing anything about what it would taste like, since I never had any Limoncello before. It was Heavenly! I dream of moving to Italy's ALMAFI Coast, raise lemons, and make this Wonderful treat. Thank you!

    Very good recipe.
I made the normal Limoncello with water using your grandmother's recipe, and it came out spectacular.
This "crema di limoncello" is a bit strong for my taste, I think it would be good to use 3 liters of milk and 1.5kg of sugar for the liter of maserated alcohol.

Little story, my Mamma has a holiday house in Italy and every year when we come, the Italian neighbours make crema di Limoncello. Always love it and asked for the recepie many times, but they don't want to share the recepie. Some sort of family secret.
But now I can make my own! I'm very grateful you were willing to share your family recepie. Thanks a lot!

Friend of mine gave me a recipe very similar. It took years being friends with an Italian regular before he would finally share the recipe with my friend.
Friend also did a variation that was half lemon, half lime, with basil and it was delicious!
    Buddy’s recipe is
    1.75L everclear
    12 lemons zest
    - set aside for at least 3 days
    1 gallon (3.8L) 2% milk
    2 quarts whole cream
    4 lbs sugar
    1 Tbsp vanilla extract
Bring dairy to almost a boil and right before boiling, mix in the sugar. Once mixed, refrigerate until cool. Then add everclear into the milk solution. Let sit together for another day or two before straining through a sieve/mesh filter.
Same as yours though - best frozen, and it gets better the longer it has.

I made this recipe & it tastes great. However, the texture seems to have some small pieces of coagulated milk (maybe is what it is?). Any ideas on what I may have done wrong? Should the milk have boiled for the 20 min's, THEN add sugar? I probably added the sugar about 5 mins into the low boil, then let low boil another 15. Stirring but not touching bottom. Pan had stuck residue at bottom when I was finished. Thanks so much, I am not a experienced cook, so much appreciated!

@Vincenzo´s Plate, I had just been in Giardini Naxos! Every evening, my husband and I went for dinner at La Trinacria close to our hotel: Villa Giardini. One evening, we got Limoncello to our espresso! Man, I thought of you, said to my husband: "That Limoncello, Vincenzo would have LOVED!" You must really try that place - even the locals gather there, ´cause the food is celicious and the spirit are high. Bring your dear Nonna, she is gonna love that place, typical Sicilian and loveable

Does cooking the milk denature the proteins and prevent it from curdling? Also is the base alcohol 95% (ever clear) or 95 proof (strong vodka)?

Absolutely, if you can't find pure alcohol, using a good quality vodka is a great alternative for your crema di limoncello recipe.

For all of you wanting to try this, please understand how important it is to use *organic lemons only*. If the lemons have been treated with pesticides, chemical fertilizers, waxes, etc, that crap will immediately infuse into your alcohol and 1. it can make you very sick and 2. it will taste bad. I won't make my own limoncello in the US because I don't live in a climate where lemons are grown so they're all imported and thus, preserved with a coating on the peel 😢 I will definitely try to make this crema with Pallini (my favorite) though! 🤤

It is difficult in Spain to buy Alcohol96 or Everclear. If I use Vodka, the quantity/amount of each ingredient changes?

    • @vincenzosplate
      @vincenzosplate  Рік тому +1

Yes, the quantity/amount of each ingredient will change if you use vodka instead of alcohol 96 or Everclear. Vodka is a lower-proof alcohol, so you will need to use more of it to get the same effect.
