I made my own limoncello using vodka like you but used 12 lemons for the zest! I then added enough water to bring the alcohol down to 20%. It came out looking great, like your original recipe. Because the alcohol was lower, more people seemed to like the taste; less alcohol, more lemon. I will try with the 96% alcohol and see the difference. As always, a sincere thanks for your excellent work!
I made this using the citrons I have growing in my back yard, and concentrated vodka (from my pot still). They are like giant lemons, and only took two for two bottles. This is the best thing I’ve ever had. Thank you. I’m making some as gifts for friends.
This recipe came out just great. Made with 95%. Perfect balance for me. Not sweet but just enough sugar to balance the alcohol. I'll be making more straight away. Grazie.
Thank you for posting. I've found using more lemon zest, and leaving for longer increases the depth and flavour when using vodlka. you can also just add a little water to the sugar to dissolve it, before adding it to the vodka / zest mixture. it does then go properly yellow (like the high alcohol version) if you just make it with enough lemon zest and leave it longer. Its all about getting enough lemon oils into the vodka.

Limoncello is supposed to be cloudy. With the weaker alcohol like vodka, you must let the lemon zest soak for at least a week to release all the oils. Only then will it turn out to be correctly cloudy.
Your video was the first I watched. 🍋 Since then the algorithm has sent me a dozen videos on how to make limoncello. Most of the proportions are the same for 96% alcohol (in Ontario 🇨🇦I can only find 76%) or 40% vodka. The differences are in how long one waits. I have seen 30 or 40 days and a recipe using honey instead of sugar and adding the juice from the lemons instead of water. Thank you for all of your recipes. I’m making limoncello as you demonstrated with a few additions. 🍊 I can’t wait to make the Bailey’s.

Finally got some 96% alcohol and have just made a bottle following your recipe. The difference (between using 40% Vodka and 96% alcohol) is enormous and I will never make the Vodka version ever again. The colour is perfect, the scent spectacular, and the flavour heavenly. I used the calculator you suggest and came up with 36.9% alcohol following your recipe, so a little on the festive side of the alcohol scale. I might dilute it down to around 30% to make it more family friendly, or maybe make a special family version and keep this bottle for myself 😄 Thanks again for sharing your recipe.
Made simultaneously limoncello using 96% alcohol, and orancello with 35% vodka. We liked both, but really stronger alcohol is much better, and looks foggy and nicer. Thanks for good recipe!
I made this (only with vodka because that's what I had) after watching your video. I shared it last weekend with my friend who's mum is Italian. He took a sniff and said, "It smells right," then he took a sip and said "It tastes right too." I'll have to teach him about the importance of responding properly with 'Spectacular.' Then he hatched a plan to make a pudding with mascaropne and lots of this booze. I didn't object. Lovely stuff, I'll make more for sure. I just need to get some of the strong alcohol for next time. I have made so far sun-dried tomatoes, aubergines, sourdough breads and today - limoncello, and they all turned out simply fantastic and nothing compared to what stores offer. it's cloudy because one mixes syrup, in reality water and alcohol with the essential oils of the 96% original recipe. so that is cloudy, like ouzo, pernod and cointreau, as soon as water hits them, they become cloudy as there are essential oils in those. you can also do the 96% with other citrus fruits as well without the sugar and have natural flavourings for baking.. spectacular.
Thanks for sharing your recipe. I love Limoncello and always have a bottle of homemade Limoncello in my fridge. Unfortunately high octane alcohol is difficult and expensive to buy in the UK (50 cl of 95% cost about 35 Euro plus delivery) so I always make do with the 40% Vodka version, but the original is of course a lot better.

Great video! I already have my lemon peels infusing the 96% alc. With your 1:1 ratio recipe the alc outcome is gonna be somewhere around 50% alc, tho. Is that how strong it typically is in Italy? Most commercial Limoncello brands have aounrd 30% alc. It's gonna be a Mothersday gift and I'm not sure, if I should use your ratio or dilute it further. Any ideas? :)
The cloudy appearance in the “original recipe” occurs because of the water being added. The “Louche” effect due to the essential oils from the lemon forming an emulsion yet without any specific emulsifier being added. Also called the “Ouzo effect”, and the same thing also happens when water is added to absinthe. I made this recipe too with 96% alcool, after the limoncello cream. From the calculation formula you gave it would be 40° in the end. Correct? It's a bit heavy on the alcool for me. Next time I'll try to get it somewhere around 35° maybe. Anyway... Ssssspectacular!! Next week, meloncello 😉

Its since vodka normaly is 37.5% which is not enough to disolve the oils in the lemon skin, but some contries sells 60% vodkas which would be better. And the real thing gets cloudy when alcohol goes under ~40% by mixing in sirup/water. then the oils comes out of solution, same as when you put water in ouzo and it turns white.
Hey, i made the it and it's amazing, how do I preserve it for longer? How long will it last just on its own and what if i add a preservative like say potassium sorbet?

Your videos is what push me into homebrewing and making Liqueurs. 2 questions. 1st is the 96% alcohol the same as moonshine or when distilling grapes the 2 or 3 batches before the final product, that are not drinkable? And 2nd, can we use the same process to make Liqueurs with anything lets say elderflower?

Great video, I am definitely trying it. Do you think, that to achieve better colour for the vodka version, crushing the lemon zest might provide a better outcome? Or may be it will trickle down some bitterness.. Cheers mate

Its since vodka normaly is 37.5% which is not enough to disolve the oils in the lemon skin, but some contries sells 60% vodkas which would be better. And the real thing gets cloudy when alcohol goes under ~40% by mixing in sirup/water. then the oils comes out of solution, same as when you put water in ouzo and it turns white.

Can last forever at room temperature but usually we drink it cold 🥶

Your videos is what push me into homebrewing and making Liqueurs. 2 questions. 1st is the 96% alcohol the same as moonshine or when distilling grapes the 2 or 3 batches before the final product, that are not drinkable? And 2nd, can we use the same process to make Liqueurs with anything lets say elderflower?
Yes like moonshine but we can buy it in the shop, it’s more safe

Can you leave the lemon zeste for more than 3 days, especially if it is vodka? Im trying to leave it for 3 months to extract more flavor.
After 3 or 4 days it’s ready if you wait more nothing happen ( scientifically accurate ) 😉
i make it with vodka and i leave it for 1 week so it gets more flavor and becomes more cloudy
