When I do this in Bitwig, I will hold a key on my Behringer MS-1 it will record hundreds of tiny MIDI dots in Bitwig. Do you have any idea why this might be?

bro this is not a full story! every time you shut your system down and keyboard, you will lose that exact sound you have set for your arrangement!

You either need to record the audio coming in from the synth, or if your synth has midi, you can use bitwig Midi program change device so that when you save the project the number of that specific synth preset is stored as well. Also some synths have a VST editor/librarian …worth looking that up too
