Great for canning or freezing
Tomato Sauce

3-3.5 Gallons of fresh or frozen tomatoes cored and quartered
4 Medium sized bell peppers (optional)
2-3 Large onions chopped
1 Large bulb of garlic peeled and minced
3 Tbs Fresh rosemary finely chopped
1 C Fresh basil finely chopped
Salt to taste
Crushed red peppers to taste
EVOO (extra virgin olive oil)
Yields 6-7 quarts
Add all tomatoes to very large stock pot and cook over medium heat
May add small amount of water. Bring to a boil and turn down to medium low. Stir
occasionally so your sauce does not stick.
After your tomatoes have started to cook a bit use an immersion blender to blend into
a nice consistency.
Once your sauce has reduced to the thickness you desire stir in all other ingredients
minus the basil.
Cook until onions are tender.
Blend again and remove from heat. Stir in basil.
Your sauce is now ready to can or freeze.
