I liked the way you steamed the fruits with the water. Never think of it that way before, but it seems logical. Ì also liked the way you flavoured it for steaming. The idea was to get the fruit soft in order to soak it..

@@kr437 it should not be steamed with water?? Says who??? This is ROMA'S KITCHEN style. This is the way it's done in MY kitchen and this is the way I have been doing it for years. It works for me. There isn't any one of way of doing things! I stew my fruits that way then add wine! MY WAY!!
Hey. I'm a several years late to the video but I was looking for items to cook with sorrell and came across your sorrel cake and then this video for the steamed fruits. I know I may sound silly but if I wanted to dry the mixed peels for myself, what peels are actually used? I'm African American with no roots to Jamican or Carribean foods.
Hey, thanks for watching. If you want to dry the mixed peels yourself, you could use orange. That’s the only one I’d suggest but not too much. Mixed peels will change the flavour of your cake if too much is used

Hi. No. Once you add alcohol, keep it in a container in a cool place and that’ll be good enough

If you can't find jamaican rum what other rum you can use
Use something that has a high alcohol volume. Over 40% alcohol. It doesn't necessarily have to be rum.
And for stewing your fruits, you can use a blend of your favorite liquors

U just leave the bottle out or u put it it the fridge ?
No need to store it in the fridge. The alcohol in it will allow it to go for years really. Keep it in a dry place

Yes but you'll need to add more wine and rum after because the strength of the wine before will be weakened
