This is such a complicated way to do it, in my opinion. There's a tutorial by Blank Earth Ceramics that feels much simpler and much faster too. But, to each her own.
I guess it depends on what they are being used for. If you have a high fire or mid range fire kiln you can use either porcelain or stoneware. That will ensure that your tiles can withstand more extreme weather. If they are just for inside decorative you can do a low fire earthenware. I hope that helps!
I'm no expert, but letting the pieces dry slowly could help with warping. You could achieve this by covering them with a slightly damp cloth and not rush the drying process.
I have tried using wax paper before. It starts to wrinkle as it gets moist and then it leaves wrinkle marks on the clay. For the things I have tried, printer paper seems to best at not leaving any wrinkle marks.

Can i use a cookie cutter to make tiles? I want to make some leaf-shaped tiles for my wall. Is this possible?
Absolutely! Cookie cutters make great tile cutters!
Yes! And if you put plastic wrap over the clay, the tiles come out without crumbs and slightly rounds the top edges. Happy cutting!

What clay do you recommend?
So far my favorite clay, that is the most versatile is Laguna B-Mix cone 5.
If you were to do something three-dimensional, would there be a way other than the heavy plank to keep the tiles from warping?

You could put them on top of a sheet rock board and gently put a plastic cover over them like Saran Wrap and let them dry slowly.
